Molasses is an important by-product of sugar beet or cane refining industry and it was one the first sweeteners used in human nutrition. Sugar molasses has unique characteristics that can make suitable for application food industry, especially confectionery bakery products. On other hand, not had greater diet, primarily because its strong smell taste beet, which makes unattractive consumption. Since recent investigations showed be as a hypertonic solution osmotic dehydration different...

This study presents data on the occurrence of aflatoxins B1, B2, G1 and G2 in maize aflatoxin M1 (AFM1) milk dairy products from Serbia 2022. A total 100 samples were analysed using liquid chromatography tandem mass spectrometry, while 107 cow goat milk, besides tested with an ELISA method. Aflatoxins contaminated 78% samples, B1 as most prevalent aflatoxin, also at highest determined level. All positive for AFM1, contamination ranged 14% to 100%. The antimicrobial activity of Allium ursinum aqueous extract prepared using high pressure extraction was evaluated. Minimal inhibitory concentrations (MIC) and minimal bactericidal (MBC) A. for six bacterial pathogens were determined the broth macrodilution method. Although shown to be effective toward all investigated foodborne bacteria, its depended on concentration strain. Listeria monocytogenes most sensitive among tested pathogens. Accordingly, lowest MIC MBC L. (28 29 mg/mL). showed a...

Sour cherry pomace filling (SCPF) and commercial sour (CSCF) produced on a semi-industrial scale were tested compared in terms of food safety, chemical composition, bioactivity, quality, sensory properties thermal stability. Both samples safe for human consumption, thermally stable there was lack syneresis. SCPF had significantly higher fiber concentration (3.79 g/100 g) due to skin fraction is considered "source fibers". The also resulted mineral quantity (Fe-3.83 mg/kg fw) comparison CSCF...
