Molasses is an important by-product of sugar beet or cane refining industry and it was one the first sweeteners used in human nutrition. Sugar molasses has unique characteristics that can make suitable for application food industry, especially confectionery bakery products. On other hand, not had greater diet, primarily because its strong smell taste beet, which makes unattractive consumption. Since recent investigations showed be as a hypertonic solution osmotic dehydration different...
This study presents data on the occurrence of aflatoxins B1, B2, G1 and G2 in maize aflatoxin M1 (AFM1) milk dairy products from Serbia 2022. A total 100 samples were analysed using liquid chromatography tandem mass spectrometry, while 107 cow goat milk, besides tested with an ELISA method. Aflatoxins contaminated 78% samples, B1 as most prevalent aflatoxin, also at highest determined level. All positive for AFM1, contamination ranged 14% to 100%. The hot dry weather during 2022 growing...
Composite films based on poly(lactic acid) filled by 0.5 and 5 wt.% of Allium ursinum extract (wild garlic) for food packaging applications were prepared. Obtained examined from the view characterization material properties antimicrobial potential. The addition two different amounts A. improved thermal mechanical neat PLA (increase in T g tensile strength both loadings). oxygen barrier obtained hybrid dry condition not significantly modified, while a slight increase transmission rate was...
The antimicrobial activity of Allium ursinum aqueous extract prepared using high pressure extraction was evaluated. Minimal inhibitory concentrations (MIC) and minimal bactericidal (MBC) A. for six bacterial pathogens were determined the broth macrodilution method. Although shown to be effective toward all investigated foodborne bacteria, its depended on concentration strain. Listeria monocytogenes most sensitive among tested pathogens. Accordingly, lowest MIC MBC L. (28 29 mg/mL). showed a...
Sour cherry pomace filling (SCPF) and commercial sour (CSCF) produced on a semi-industrial scale were tested compared in terms of food safety, chemical composition, bioactivity, quality, sensory properties thermal stability. Both samples safe for human consumption, thermally stable there was lack syneresis. SCPF had significantly higher fiber concentration (3.79 g/100 g) due to skin fraction is considered "source fibers". The also resulted mineral quantity (Fe-3.83 mg/kg fw) comparison CSCF...
The aim of this study was to investigate the antibacterial activity raw milk from Domestic Balkan donkey breed toward Listeria monocytogenes and Staphylococcus aureus. Examination performed in artificially contaminated samples by monitoring changes count viable cells tested bacteria during 8 hours incubation at 38°C. Lysozyme fatty acids contents were also determined milk. obtained results indicated inhibitory effect both bacteria. lysozyme content analyzed ranged 0.67 3.54 g/L. most...
The aim of this study is to compare the efficacy selected food disinfectants on planktonic populations Staphylococcus aureus and Escherichia coli same microorganisms (MOs) incorporated in a biofilm. Two were used for treatment: peracetic acid-based disinfectant (P) benzalkonium chloride-based (D). Testing their MO was performed using quantitative suspension test. standard colony counting procedure determine bacterial suspensions tryptone soy agar (TSA). germicidal effect (GE) determined...
An inhibitory effect of various concentrations (0.0, 0.5, 1.0, 1.5 and 2,0%) mint (Mentha piperita L.) caraway (Carvum carvi on the growth A. fumigatus, flavus ochraceus was examined during 10 days cultivation in YES medium at temperature 25?C. Mint showed stronger than caraway. Total dry weight (g/l) after fumigatus with 0.5% decreased by about 95%, 97% 82%. Addition higher (1.0, 2.0%) reduced all tested species. It poor hardly visible. pH values media increased increase concentrations....
Confectionery fillings are products used in confectionery and baking industry containing approximately 30–40 g fat/100 product. Due to the high fat content, they have considerable caloric value. Therefore, there is a trend decrease content filling formulations. The objective of this study was investigate feasibility using two types maltodextrin gels as potential replacers fillings. Vegetable partially replaced by potato specially derived waxy-maize aqueous (15 20 g/100 g) three different...
The aim of this study was to investigate microbiological, chemical and sensory properties raw donkeysâ milk from an autochthonous breed originated Serbia. Changes in microbiota during the six days storage at 4°C were monitored by enumeration total count bacteria, yeasts moulds, coagulase positive staphylococci, lactic acid bacterial endospores, Escherichia coli, Clostridium perfringens and Salmonella spp. Descriptive method used for determination properties. terms...
Domestic Balkan donkey (Equus asinus asinus) is a native breed, primarily found in the northern and eastern regions of Serbia. The objective study was to analyze proteins milk during lactation period (from 45th 280th day) by applying Lab-on-a-Chip electrophoresis. chip-based separations were performed on Agilent 2100 Bioanalyzer combination with Protein 80 Plus Lab Chip kit. protein content 280 days ranged from 1.40 % 1.92 ?s1-casein, ?s2-casein, b-casein, ?-, ?- lactoglobulin, lysozyme,...
Due to the emergence of antibiotic-resistant bacteria, risk it represents public health, and possible consequences for animal health welfare, there is an increasing focus on reducing antimicrobial usage (AMU) in husbandry. Therefore, a great interest developing alternatives AMU livestock production present worldwide. Recently, essential oils (EOs) have gained attention as promising possibilities replacement antibiotics. The current study aimed test potential using novel EO-based...
The primary aim of this experiment was to investigate the bioactivity potential and polyphenolic profile defatted raspberry seeds (DRS) extracts from three varieties (Willamette, Meeker, Polka) using in vitro tests HPLC-DAD UHPLC-Triple-TOF-MS. Extracts were obtained ultrasound-assisted extraction (UAE) or hydrolysis. antioxidant activity tested 1,1-diphenyl-2-picrylhydrazyl (DPPH), 2,2′-azinobis-(3-ethylbenzothiazoline-6-sulfonic) cation (ABTS), ferric reducing power (FRAP) assays....
The aim of this study was to examine the microbiological quality raw donkey milk an indigenous Serbian breed as well changes in microbial populations during storage at 4 °C. In addition, antibacterial activity against E. coli, L. monocytogenes and S. aureus 15 °C content two main proteins lysozyme lactoferrin were investigated. Microbiological examination 137 individual samples collected over a period 21 months showed good since foodborne pathogens such Salmonella spp. not detected any...
Blueberry pomace, by-product of juice production, was processed into a new food ingredient by drying and grinding used for gluten-free cookies' formulation, with the aim improving nutritional profile antioxidant capacity. Since duration temperature at which dough is thermally treated during baking highly influence quality baked product, objective this work to optimise conditions in order obtain best technological cookies. Referring results obtained 160 170 °C different times, following...
The microbiological standard method for the detection of Salmonella spp. is time-consuming, and consequently there a need an alternative rapid methodology its detection. In this study, two open-formula real-time PCR methods detecting inv A ttr gene have been successfully optimized in-house validated. Different DNA extraction procedures were used (boiling, Chelex resin I - Biorad). relative sensitivity false positive ratio 100% 0.0%, respectively. trueness was in range from 96.8% to 99.2%. No...
