본 연구에서는 ‘쓰가루’ 사과즙을 이용하여 제조한 두부의 품질, 항산화 활성 및 관능 특성을 분석하고자 하였다. 두부제조를 위해 사용한 사과즙은 60%의 수율, 10.3 °Brix, pH 3.89, 0.51%의 총산을 나타내었고, 총폴리페놀 함량은 2.26 mg GAE/g, ABTS 라디칼 소거능은 20 μg AE/g, DPPH 75 AE/g을 나타내었다. 첨가하여 제조가 가능하였으며, 사과즙의 첨가량이 증가할수록 제조된 수율과 pH는 감소하였으나 총산은 증가하는 경향을 또한 조직감에서는 경도와 씸힘성이 증가하였으나 응집성은 다소 감소하는 나타내었으며, 색도에서는 L값이 감소하고 a값과 b값은 증가하여 전반적으로 어두운 갈색을 이러한 갈색화 반응의 주요 원인은 효소적 반응에 기인하므로 비타민 C 등의 환원제, 산미제 무기염을 사용하는 방법으로 갈변 방지를 최소화할 수 있을 것으로 생각된다. 그리고 활성에서는 함량과 소거능이 증가한 반면 일정한 범위를 유지하였다. 사과즙...

We investigated pesticide residues in green coffee beans. Toward this, we collected 80 samples of beans and analyzed the presence 41 different pesticides using a combination QuEChERS method GC-MS/MS LC-MS/MS. 전고체 전지는 폭발 및 화재 위험이 없어 전기차나 ESS용 차세대 이차전지로써 주목을 받고 있다. 하지만 대부분의 고체전해질은 대량 생산의 어려움으로 인해 실용화에 한계가 본 연구에서는 산화물계 고체전해질과 고분자 고체전해질이 결합된 복합 고체전해질 시트를 대면적으로 제조하였다. 결과적으로, 제조된 시트는 3.33~4.45 × 10SUP-4/SUP S/cm 범위의 이온전도도와, 39~41 ㎛ 균일한 두께를 가짐을 확인하였다. 또한, Li/CSE/LFP 셀의 특성을 평가한 결과, 0.33 C, 70℃, 50 사이클 이후 82.33%의 높은 용량유지율을 구현하였다. 따라서, 연구는 기반 전지 제조를 위한 실용적인 전략을 제공한다.
