Nghiên cứu này được thực hiện nhằm đánh giá ảnh hưởng của màng bọc nanochitosan với các nồng độ khác nhau đến chất lượng trứng gà tươi dựa vào biến đổi cảm quan và bên trong 30 ngày ở nhiệt thường. Nghiên cứu này nhằm xác định ảnh hưởng của một số yếu tố (nhiệt độ, pH ban đầu, thời gian nuôi cấy, nồng độ CMC, NaNO3­) đến khả năng sinh tổng hợp cellulose chủng nấm mốc Aspergillus niger T2 và ứng dụng trong quá trình chế biến tiêu sọ.
