Our aim was to evaluate the sensorial acceptance and consumption intent of pasteurized milks coalho cheeses produced with milk low (80,000 cells/mL) high (480,000 somatic cell count (SCC) level. Low SCC (LCC) obtained statistically higher scores on aroma, consistency, flavor overall liking attributes in comparison milk. LCC mean for all were than Coalho Cheese.
