This study evaluated the antifungal and antioxidant activities of earthworm (Perionyx excavatus) powder extracts using different solvents including 80% ethanol, 50% distilled water. The extraction efficiencies ranged from 18.5 to 21.2%, while total protein contents 64.8 67.5%. Notably, aqueous extract exhibited highest values in both efficiency content. Thin-layer chromatography analysis revealed presence amino acids peptides with Rf ranging 0.42 0.65. Fourier-transform infrared spectroscopy...

Monofloral honey samples (Coffea robusta) from Vietnam were determined for their chemical compositions. This is the first report on composition and antioxidant activity of coffee Vietnam. These characterized by high contents total reducing sugars, phenolic contents, flavonoid contents. The seven acids (PAs) quantified performance liquid chromatography (HPLC) analyzed with assistance principle component analysis (PCA) to differentiate into groups. hydroxymethylfurfural (HMF) (0.048-2.933...

Response surface methodology (RSM) was used to optimize the extraction conditions for total phenolic content (TPC), flavonoid (TFC) and antioxidant activity (DPPH) in black shallots (Allium ascalonicum) using ultrasonic-assisted (UAE). The variables process were temperature (40-60oC), time (60–80 min), ethanol concentration (30–70%) power level (60–100%/600W). results indicated that temperature, time, ultrasonic had an impact on TPC, TFC DPPH radical scavenging activity. optimum obtained...

Ginger, a commonly used spice and medicinal herb, is an abundant source of bioactive compounds. However, the utilization ginger in pharmaceutical industry still moderate not commensurate with potential Vietnamese horticulture industry, mainly due to lack information about quality input materials. In this study, we compared volatile compounds gingers collected from 13 provinces Vietnam using GC/MS GC-FID analysis provide basis for selecting standardizing Furthermore, essential oil Ben Tre...

High-nutrition components and antioxidant compounds have been discovered in many marine organisms recent years, especially oysters mussels; but, the two bivalves not studied extensively Vietnam. Therefore, both green mussels from Long Son, Vietnam were collected for investigation. Results showed that total macronutrient contents greater than those of oysters, with glutamic acid being most abundant amino at 1.35 1.25 g/100 g, respectively. Total relevant mineral content was 521,954 mg/100 g...
