In this study, okara dietary fiber samples were prepared through a combination of solid-state fermentation using Aspergillus oryzae and ultrasonication. Subsequent infrared UV–visible spectral analyses revealed that such treatment resulted in an increase the oligosaccharide content these enhanced cleavage hydrogen bonds. Scanning electron microscopy X-ray evaluation further confirmed changes structural makeup SDF (soluble fiber) relative to control samples. Following treatment, soluble...
Abstract This study aimed to characterize the physicochemical properties and stability of L-25 melanin extracted from Sporisorium reilianum ( S. reiliana). The results showed that maximum absorption wavelength was 215 nm. Reducing agents, heat, light, microwaving, oxidants, common food additives did not affect melanin. Additionally, it has a good metal except Mn 2+ . IR spectra revealed presence O–H, N–H, C=O, C=C bonds as well carboxyl, alcohol hydroxyl, phenolic hydroxyl groups pyran ring....
Globally, the incidence of diseases such as obesity, fatty liver and hyperlipidaemia has increased drastically in recent years. This study investigated direct treatment obesity its associated metabolic disorders using peanut-natto a high-fat diet (HFD)–induced mouse model obesity. After 6 weeks treatment, significantly reduced body abdominal fat weight mice with decreased cell area droplet accumulation improved colon structure by regulating levels intestinal lipid metabolism-related proteins...
Abstract BACKGROUND Dajiang is fermented based on the metabolism of microbial communities in bean sauce mash, a traditional soybean product China. The current study first investigated metaproteome mash. This was followed by an analysis its biological functions and community to reveal information about strains expressed proteins better understand roles microbiota RESULTS metaproteomic results demonstrated that total 1415 protein clusters were mainly members Penicillium Rhizopus genera...
Abstract Da‐jiang is a typical traditional fermented soybean product in China. At present, the proteins da‐jiang are needed to be explored. The composition and species of microbial were analyzed by metaproteomics based on sodium dodecyl sulfonate‐polyacrylamide gel electrophoresis (SDS‐PAGE) liquid chromatography‐mass spectrometry/mass spectrometry (LC‐MS/MS). results showed that number variety from different regions different. production site influences fermentation . Then we functions...
Nattokinase is an alkaline serine protease secreted by natto during fermentation. Despite its good thrombolytic effect, it intolerant to gastrointestinal conditions and easily digested degraded into polypeptides, oligopeptides, amino acids. However, whether these peptides inhibit fat-digesting enzymes other biological activities remains unknown. To explore the bioactivity of produced through nattokinase degradation, was subjected simulated digestion in tract, 41 small were obtained...
This study observed the effects of pulsed light (PL) on germination and gamma-aminobutyric acid (GABA) production brown rice analyzed correlations among glutamic (Glu) content, glutamate decarboxylase (GAD) activity, GABA content in germinating rice. Both were increased by exposure to PL, this effect was evident when exposed PL immediately after being soaked. The group had significantly higher Glu than control check (CK) which unexposed during peaked at 18 h 24h group, 12 6 earlier CK...
Peanut sprout is a high-quality healthy food, which not only has beneficial effects, but also higher phenol content than peanut seed. In this study, was treated with five cooking methods, namely boiling, steaming, microwave heating, roasting, and deep-frying, the content, monomeric composition, antioxidant activity were determined. The results showed that, compared unripened sprout, total (TPC) flavonoid (TFC) decreased significantly after ripening processes, highest retention of phenols...
Ara h 1 is the most abundant sensitizing protein in peanuts; it has high thermal stability and difficult to degrade. The peanut sprout a high-quality, natural food that various beneficial effects lower allergenicity than seeds. In this study, ultrasonication (US) of sprouts was used alter their content. We determined optimal parameters for US process were 35 °C temperature, 30 min duration, 240 W power, 100 kHz frequency. After 5 days germination, protease activity control (blank) group...
Edible fungus has attracted great interest with many health benefits, and polysaccharides from them have shown potentials. In this study, were extracted Sphacelotheca sorghi (Link) Clint. Monosaccharide composition of S. (SSP) was detected by high-performance anion exchange chromatography (HPAEC) mainly consists glucose (70.5%), galactose (15.6%), mannose (7.2%), arabinose (5.8%), rhamnose (0.9%). Type 2 diabetes (T2D) induced a high-fat, high-sugar diet-fed (HFSD) diet streptozotocin (STZ)...

Abstract The present study used gas chromatography–mass spectrometry (GC–MS) and chromatography–ion mobility (GC–IMS) to separate identify the characteristic volatile flavor substances in 30 roasted peanut samples. GC–MS identified 59 compounds, GC–IMS detected 61 substances. varieties were then divided into four groups on basis of their using principal component analysis (PCA), a fingerprint profile varieties' characteristics was established from information peaks spectra. Descriptive...
Research on the nutrient content of cereal grains during germination is becoming a hot topic; however, studies germinated maize are still scarce. This study aimed to provide technical reference and theoretical basis for development functional health foods expand application ultrasonic technology in production grains. In this study, rate was used as evaluation index, frequency, temperature, induction time were selected influencing factors orthogonal experiments determine optimal process...
Abstract A simple and rapid methodology for the synthesis of fully substituted pyrroles was accomplished by reaction microwave‐assisted from amines, 4‐hydroxycoumarins, ketones. This protocol proceeds via ketones Csp 3 −H oxidation Michael addition/ cyclization/ aromatization four‐component cascade affording pyrrole in moderate to excellent yields only min. Simple conditions, high yields, compatibility are advantages this protocol.
Combined transcriptomic and proteome analyses were carried out to investigate the influence of ultrasound pretreatment on peanut sprouts. In total, 1104 differentially expressed genes (upregulated:538, downregulated:521) 399 accumulated proteins (upregulated: 197, downregulated: 202) identified between pretreated nontreated These related a series crucial biomolecular processes, including metabolism carbohydrates, terpenoids, polyketides. The most enriched pathways further analyzed in each...
GABA (γ-aminobutyric acid) is an inhibitory neurotransmitter in mammalian cerebrospinal fluid that has a variety of health benefits, which accumulated sprouted grains. In this study, ultrasonication (US) maize sprouts was used to alter their content. The analysis indicated the respiration ultrasonic-treated significantly enhanced during germination, resulting 27% increase shoot length, as well 4.03% higher dry matter consumption rate, and 2.11% starch rate. Furthermore, optimum sonication...
