エマルション中でのDHA含有トリアシルグルセロール(TG)の酸化に対する各種タンパク質の阻害作用について検討した.DHA含有TGとしては,DHAを16%含有するTG(DHA 16%)と40%含有するTG(DHA40%)を用いた.また,タンパク質としては,鶏卵アルブミン,ミルクカゼイン,分離大豆タンパク質及び6種願の酵素分解大豆タンパク質を用いた.カゼインとアルブミンを用いて分散させたDHA 40%を除いて,タンパク質によりDHA含有TGを分散させた方が,Triton X-100を用いるよりも酸化されにくかった.大豆タンパク質分解物は,他のタンパク質よりもDHA含有TGの酸化に対してより高い阻害効果を示し,その効果は分解率の上昇に伴い増大した.大豆タンパク質分解物のDPPHラジカルに対する消去能力も,その分解率に伴って増大したので,大豆タンパク質分解物のDHA含有TG酸化に対する阻害効果は,主として,そのフリーラジカルに対する阻害作用に依存しているものと考えられた,しかし,各大豆タンパク質分解物の阻害程度は,DHA 16%とDHA...
