麦茶の好ましい味・香り,すなわち風味についてフレーバーホイールを作成することで,精確かつ具体的な表現を可能にすると共に,それを用いた分析型官能評価による市販の麦茶の味・香りの特徴を評価した.さらに,2種類の丸粒形状の麦茶についてAEDA法を採用したGC-O分析により,香気を比較した.よって,官能評価と化学分析の二つの手法により麦茶の好ましい味・香りについてアプローチを行い,その特性の解明を試みた.

麦茶加工適性の高い大麦品種の識別を目的に,原料大麦の簡易分析と焙煎後の粉砕L値が30となるように同一条件で焙煎試験を行い,得られた焙煎大麦と原料大麦の分析値の相関を調査した.その結果,千粒重と麦茶抽出液の吸光度に高い負の相関が認められた.また,麦茶抽出液の官能評価を行った結果,タンパク質含量が高いほど,風味及び香りが強いという傾向が認められた.これらの結果から,風味や香りに大きな影響を与える成分と麦茶の色に大きな影響を与える成分が異なると考えた.すなわち,風味や香りにはタンパク質が焙煎により褐色反応を起こすメイラード反応の影響が強く,麦茶抽出液の吸光度には糖質の褐色反応であるカラメル反応が大きく起因していると推測した.
