ABSTRACT Protective effect of quercetin against acetaldehyde was evaluated using the cultured hepatocyte models with aldehyde dehydrogenase (ALDH) isozyme deficiency (aldh2-kd and aldh1a1-kd). The quercetin-induced cytoprotection in ALDH1A1-deficient mutant (aldh1a1-kd) weaker than that wild type.
