The bacteriocin-producing strain Enterococcus faecium ST5Ha was isolated from smoked salmon and identified by biomolecular techniques. Ent. produces a pediocin-like bacteriocin with activity against several lactic acid bacteria, Listeria spp. some other human food pathogens, remarkably HSV-1 virus.
