We present surface enhanced Raman optical activity (SEROA), as well Raman, SERS and ROA, spectra of D- L-ribose. By employing a gel forming polyacrylic acid to control colloid aggregation associated birefringent artefacts we observe the first definitive proof SEROA through measurement mirror image bands for two enantiomers.
Here we reveal details of the interaction between human lysozyme proteins, both native and fibrils, their water environment by intense terahertz time domain spectroscopy. With aid a rigorous dielectric model, determine amplitude phase oscillating dipole induced THz field in volume containing protein its hydration water. At low concentrations, this dipolar response decreases with increasing concentration. Beyond certain threshold, marking onset interactions extended shells, remains fixed but...
Spatially off-set Raman spectroscopy (SORS) offers non-invasive chemical characterisation of the sub-surface various biological tissues as it permits assessment diffusely scattering samples at depths several orders magnitude deeper than conventional spectroscopy. Chemicals such glycogen, glucose, lactate and cortisol are predictors meat quality, however detection these chemicals is limited to surface using their concentration higher within tissue. Here, we have used SORS detect spectral...
Monellin is a highly potent sweet-tasting protein but relatively little known about how it interacts with the sweet taste receptor. We determined X-ray crystal structures of 3 single-chain monellin (MNEI) proteins alterations at 2 core residues (G16A, V37A, and G16A/V37A) that induce 2- to 10-fold reductions in sweetness relative wild-type protein. Surprisingly, no changes were observed global fold or positions surface amino acids important for MNEI could explain these differences activity....
Abstract The potential of spatially offset Raman spectroscopy (SORS) for distinguishing different beef cuts was investigated. Six retail (rump, Scotch fillet, round, chuck, tenderloin, and T‐bone) were analysed spectroscopically using SORS. This technique makes it possible to measure the signal 5 mm below surface meat muscles, allowing non‐invasive analysis samples that are not readily feasible conventional spectroscopy. study has shown first time monitoring changes in glycogen, fat, protein...
Abstract Authenticity is of great importance in the food industry. There a need for rapid, reliable methods that can ‘fingerprint’ foods and show their composition. In this study, we trialled spatially offset Raman spectroscopy (SORS) as convenient method to distinguish between cheeses different animal origins. SORS rapid non‐destructive be applied products various packaging materials such plastic. The technique also has capability monitor larger volume sample contrast with conventional...
Raman and optical activity (ROA) spectra are presented for adenosine seven of its derivative ribonucleotides. Both these spectroscopic techniques shown to be sensitive the site degree phosphorylation, with a considerable number marker bands being identified ROA provide most diagnostic tool phosphorylation characterization quantification.
