To understand the effect of physical state and composition lipid materials on formation performance nanocarriers, three types carriers namely, solid nanoparticles (SLN), nanostructured (NLC) nanoemulsions (LNE) were prepared compared. Quercetin was used as a model nutraceutical compound to evaluate potency these nanocarriers increase bioaccessibility. Among developed quercetin loaded free NLC showed smallest particle size (∼34 47 nm) compared SLN (∼103 127 LNE (∼82 83 nm). Encapsulation...

To increase the oral bioavailability of curcumin and genistein, we fabricated nanostructured lipid carriers (NLCs), impact these on bioaccessibility genistein was studied. Entrapment efficiency more than 75% for and/or genistein-loaded NLCs. Solubility in simulated intestinal medium (SIM) >75% after encapsulating within NLCs which otherwise <20%. Both have shown good stability (≥85%) SIM gastric (SGM) up to 6 h. Coloading had no adverse effect solubility each molecule. Instead, coloading...

ABSTRACT: The effects of hydrophobicity/hydrophilicity edible films against Listeria monocytogenes strain V7 by various nisin concentrations (4.0 ‐ 160 IU/film disk) and pH values ranging from 2.0 to 8.0 were determined the mechanical properties water vapor permeability prepared with or without compared. Surface hydrophobicities (446, 282, 232 142, respectively) whey protein isolates, soy egg albumen wheat gluten determined. As concentration increased, amount inhibition progressively...

Sub-100-nm nanoparticles were prepared from β-lactoglobulin (BLG) with a narrow size distribution by desolvation method using glutaraldehyde for cross-linking. With pre-heating of the BLG solution to 60°C and subsequent pH readjustment 9.0, 59 ± 5 nm obtained improved uniformity. Bovine serum albumin (BSA) nanoparticles, under similar conditions comparison, larger less uniform. The half-width 80% particle was used compare uniformity distribution. stability investigated degradation tests at...

Abstract Lycopene is a natural antioxidant which has several health benefits. Undesirable oxidation of lycopene compromises its benefits and also affects the sensory quality food products containing lycopene. Health associated with in preparations can be enhanced by preventing degradation incorporating it into oil phase an oil‐in‐water nanoemulsion. In this study, nanoemulsions were prepared from low‐concentration extract using emulsification–evaporation technique. The effects concentrations...

Antibiotic resistance is growing exponentially, increasing public health concerns for humans and animals. In the current study, we investigated antimicrobial features of chitosan microparticles (CM), engineered from by ion gelation, seeking potential application treating infectious disease caused multidrug resistant microorganisms. CM showed excellent activity against a wide range microorganisms, including clinically important antibiotic-resistant pathogens without raising mutants in serial...
