酪農学園大学キャンパス内の自生キノコ48試料について遺伝子解析による同定を行ったところ46試料が種あるいは属レベルで同定された.Congo Red法によるβ-グルカンの定量結果は,測定値にセルロースなどの直鎖状β-グルカンを含まないことから,酵素法と比べて小さい値となったがβ-グルカンの高次構造を反映した機能性を評価する上ではむしろ有用であると考えられた.また食材の機能性評価に汎用されるTPPおよびDPPHラジカル消去活性を測定したところ,両測定値間には強い正の相関が認められ,キノコの抗酸化性にはポリフェノールが関与していることが示唆された.β-グルカン,TPPおよびDPPHラジカル消去活性のいずれの機能性指標においても科ごとに一定の傾向は見られず,種ごとに特徴的な値を示すことが確認された.
