In order to reveal the effect of drying temperature on quality purple sweet potato powder, four temperatures (70, 80, 90 and 100 o C) were selected. The color, anthocyanin content, scavenging ABTS free radical ability studied. results showed that process decreased with increasing temperature, a* value content decreased.
