버섯 내의 ergocalciferol, 즉 비타민 D의 함량을 증가시키기 위하여 많은 연구가 진행되고 있다. 본 연구의 목표는 자외선 조사를 통해 버섯을 선정하고 선정된 버섯의 ergocalciferol 함량이 증가한 제조 조건을 확립하여 제품개발 및 상업화를 위함이다. 연구에 사용된 새송이(Pleurotus eryngii), 느타리(Pleurotus ostreatus), 팽이(Flammulina velutipes), 양송이(Agaricus bisporus), 표고(Lentinula edodes) 5종의 대상으로 미세분말화한 후 조사에 따른 함량의 증진 효과를 조사하였다. 버섯은 30분 동안 크게 증가하였으며, 그중 표고버섯이 함량(76.12±2.53 μg/g)과 전환율(2.98%) 증진에 효과적이었다. 시간별 조사 시 표고버섯의 함량과 전환율이 높은 시간은 35.54 ±1.11 μg/g 5.56%로 15분이었다. 지역별 가장 지역은 함량 99.92±3.71 전환율...
