Trials over two years were conducted using 1389 sweetpotato (Ipomoea batatas L.) genotypes collected from all the world to characterize polyphenolic composition in leaves. Wide variation was observed relation their total and individual leaf constituents. In studied, polyphenol contents of ranged 1.42 17.1 g/100 g dry weight. The six different compounds identified quantified by NMR, FABMS, RPHPLC analysis procedures. This is first report compositions relative levels acids leaves as follows:...
The caffeoylquinic acid derivatives, 3-mono-O-caffeoylquinic (chlorogenic acid, ChA), 3,4-di-O-caffeoylquinic (3,4-diCQA), 3,5-di-O-caffeoylquinic (3,5-diCQA), 4,5-di-O-caffeoylquinic (4,5-diCQA) and 3,4,5-tri-O-caffeoylquinic (3,4,5-triCQA), caffeic (CA) were isolated from the sweetpotato (Ipomoea batatas L.) leaf. We examined antimutagenicity of these compounds to promote new uses These derivatives effectively inhibited reverse mutation induced by Trp-P-1 on Salmonella typhimurium TA 98....
Rutin, a phenolic compound, has antioxidant, anti-dyslipidaemic, and body weight-reducing effects. We evaluated the anti-arteriosclerotic, effects of rutin-rich Tartary buckwheat. randomly divided 144 adult subjects into an active test food group consuming products containing buckwheat placebo group. Body composition measurements haematological urine tests were performed at weeks 0, 4, 8, 12, 3 after termination. Atherosclerosis index ox-LDL did not significantly differ between groups....
Buckwheat is an important crop globally. It has been processed into cereal grain, noodles, confectionery, bread, and fermented foods for many years. production processing supported local economies deeply related to the culture of some regions. unique traits as a food, with good flavor color. In addition, buckwheat also healthy food because it contains bioactive compounds that have anti-oxidative, anti-hypertensive, anti-obesity properties. Therefore, breeding quality issue be addressed....
Here, we developed a new Tartary buckwheat cultivar 'Manten-Kirari', whose flour contains only trace amounts of rutinosidase and lacked bitterness. The trace-rutinosidase breeding line 'f3g-162' (seed parent), which was obtained from Nepalese genetic resource, crossed with 'Hokkai T8' (pollen the leading variety in Japan, to improve its agronomic characteristics. progeny were subjected performance test. 'Manten-Kirari' had no detectable isozymes an in-gel detection assay 1/266 activity T8'....
Polyphenolic content and radical-scavenging activities (RSA) of four sweetpotato (Ipomoea batatas L.) cultivars were characterized after storage at optimal (15 °C) or low temperature (5 for 0, 13, 26, 37 days. The polyphenolic increased during in three but not 'Murasakimasari'. change 1,1-diphenyl-2-picrylhydrazyl activity (DPPH-RSA) correlated very well with content. increases polyphenolics the RSA 'Benimasari' significantly greater 5 °C than 15 °C. main components all chlorogenic acid...
Hardness and the percentage of leaked water sweetpotato starch gels after storage were investigated as indexes retrogradation. Starches some varieties retrograded rapidly, but those others not during for one week. After month storage, starches all highly retrograded, varietal order hardness almost same that The study chain length distribution by gel permeation chromatography debranching isoamylase showed from positively correlated with amylose content proportion Fr 1, fraction highest...
The phenolic content and the radical scavenging activity were compared in leaves of sweetpotato ( Ipomoea batatas L.) cultivars Shimon-1, Kyushu-119 Elegant Summer grown under different temperature shading conditions. Compared to cultivar differences, there was less effect on total leaves, however certain polyphenolic components differed widely among treatments. positive correlation between level phenolics r = 0.62) suggests that compounds are important antioxidant leaves. All reverse-phase...
Calcium- and magnesium-fortified potato starches were prepared by immersion in various concentrations of CaCl2 MgCl2 aqueous solutions, respectively. The pasting properties, i.e., peak viscosity breakdown, all the obtained above analyzed using a Rapid Visco Analyzer. Furthermore, gelatinization properties vitro digestibility representative calcium- tested. maximum calcium content fortified was as high 686 ppm with addition high-concentration solution, while control starch 99 ppm. magnesium...
In a screening of about 500 lines Tartary buckwheat, we identified that contained no detectable rutinosidase isozymes using an in-gel detection assay. We confirmed seeds these individuals had only trace level in-vitro activity. To investigate the heritability trace-rutinosidase characteristic, analyzed progeny crosses between trace-lines, 'f3g-162', and 'Hokkai T8'. The F2 clearly divided into two groups: those with activity under 1.5 nkat/g seed (trace-rutinosidase) over 400 (normal...
In order to investigate the toxicity of rutin-rich dough from Tartary buckwheat variety 'Manten-Kirari,' acute and subacute studies (10,000 5,000 mg/kg flour, respectively) were performed using rats. study, no toxic symptoms observed rats died during test. Body weight in 'Manten-Kirari'-treated group was not significantly different when compared with that control group. On pathologico-anatomic observation, unusual food intake common groups However, some investigated properties, such as urine...
The rutin content of dough made with 'Manten-Kirari', a new Tartary buckwheat variety trace-rutinosidase activity and minimal bitterness, was assessed in time course study hydrolysis doughs various water contents blending ratios flour. In the normal rutinosidase variety, 'Hokkai T8', majority hydrolyzed within 30 min addition, whereas about 90% remained 'Manten-Kirari'. We also investigated residual ratio white bread, butter enriched roll, pound cake galette. With almost completely all foods...
A Tartary buckwheat variety, 'Manten-Kirari', which is rich in rutin but lacks bitterness because of trace rutinosidase activity, was recently developed. Rutin content 1,269 and 1,421 mg/100 g DW dried noodles cookies made with 50% 'Manten-Kirari' flour, respectively. The residual ratio during preparation 99.3% 80.6%, Hydrophilic antioxidant capacity (H-ORAC) 149.8 µmol TE/g 209.2 cookies, contribution to H-ORAC 96.2% 69.8% These results indicated that the antioxidative activities flour were...

Contamination of rutinosidase is a major problem for rutin-rich food due to the hydrolysis functional compound rutin and generation strong bitterness caused by hydrolyzed moiety quercetin. This sometimes occurs between trace normal Tartary buckwheat varieties. Here, we developed simple rapid method detection in 'ripening seeds using UV light' 'dough alum-flavonoid complexation' from (Fagopyrum tataricum Gaertn.). Normal can be distinguished trace-rutinosidase mature ripening young solution...
Abstract Some new sweet potato lines were developed from progenies of a cultivar, Quick Sweet, having low pasting temperature. Starch granules these demonstrated an abnormal morphology characterized by cracking into fragments. and amylose contents different among lines. Pasting temperatures determined the Rapid Visco Analyser 53.8 to 66.6°C, i.e. 10 20°C lower than that control. Peak viscosities some similar retrogradation, evaluated percentage leaked water hardness starch gels after cold...
