穀物GABA富化装置を用いてGABA含有量を富化した北海道米「ゆめぴりか」を材料に,最適な富化処理条件の設定とヒトへの抗ストレス効果を検証した.精白米のGABA含有量,炊飯米の官能評価および香気成分分析から,最適な富化処理時間を3時間と定めた.次に,プラセボ(通常の精白米)を対照とした10週間の二重盲検並行群間試験を実施した.被験者は39名であった(被験食群22名,プラセボ食群17名).VASテストの結果から,GABA富化米の摂取により精神状態と睡眠の質が改善される傾向が見られた.また,コルチゾールとアディポネクチンの血中濃度から,GABA富化米の摂取によりストレス負荷が軽減される傾向が見られた.以上より,3時間の富化処理下で製造したGABA富化米は,ストレス負荷を緩やかに軽減させる効果を有する可能性が示唆された.
