既存添加物のうち,酸化防止剤に分類される品目の抗酸化活性に基づく新たな品質規格策定を最終目的とし,その基礎となる抗酸化活性評価法の公定化に対する適用性の検討を行った.本研究では,代表的な分光学的抗酸化活性測定法であるDPPH法,ABTS法,WST-1法による単一化合物酸化防止剤(9種類)の抗酸化活性測定を3カ所の研究室で共同試験し,得られた結果の室間再現精度の検証を行った.その結果,DPPH法,ならびにABTS法は単一化合物酸化防止剤の抗酸化活性測定において,比較的高い測定精度を示すことが判明した.その一方で,WST-1法は先の2法と比較すると測定精度に劣るという結果が得られた.DPPH法,ならびにABTS法は更に研究室数を増やして試験室間共同試験を行い,分析法の妥当性確認を行うことにより,公定法化を進めることが可能であると考えられた.
