The term "functional foods" comprises some bacterial strains and products of plant animal origin containing physiologically active compounds beneficial for human health reducing the risk chronic diseases. Among best known functional probiotics, prebiotics natural antioxidants should be given as examples. These substances can obtained by biotechnological methods extraction from or tissues.
