배(Pyrus pyrifolia)의 과피와 과심에 복합효소처리 의해 물리화학적 특성 및 기능성에 미치는 영향을 조사하였다. 배의 4종의 복합효소를 처리할 경우 과피의 가용성 고형분 함량이 증가하였고 과심은 유의적으로 증가하지 않았다. 함량은 Pectinex로 처리하였을 때 가장 높은 증대효과를 나타냈다. 또한 환원당 추출 수율을 얻을 수 있었다. 총당 대부분의 효소처리군에서 증가하여 효소에 탄수화물이 분해되어 당 증가하는 것을 확인할 과피에 Viscozyme으로 총 폴리페놀 함량, 플라보노이드 DPPH radical 소거능, ABTS 소거능 SOD 유사활성이 보였다. Celluclast로 증가하였고, Ultraflo 처리군을 제외한 나머지 효소처리군에서는 비슷한 양상으로 증가하였다. 시 소거능과 소거능은 않았고 유사활성은 모두 결과적으로 탄수화물 분해 처리함으로써 고형분, 항산화 물질의 추출률을 증가시키고 활성을 향상시킬 있음을 확인하였다.

Hemoglobin was hydrolyzed with Esperase and Flavourzyme as the endopeptidase exopeptidase, respectively. 클로렐라를 식품재료로 사용하기 위하여 클로렐라 분말을 0-0.1% 첨가한 물김치를 제조하여 $15^{\circ}C$ 에서 6일간 발효시키면서 이화학적, 미생물학적 및 관능적 특성을 조사하였다. pH는 발효 3일만에 급격하게 감소하여 0.1%를 경우 pH 6.31에서 3.89로, 대조구는 5.98에서 3.83으로 하락하였으며, 감소정도는 첨가량에 비례하였다. 적정산도는 발효가 진행됨에 따라 모든 처리구에서 증가하였으며, 변화와 동일한 경향이었다. 대부분의 환원당 함량은 초기 최대값을 보인 후 감소하였으나 0.1%의 큰 변화가 없었다. 젖산균 수는 발효초기에 급속하게 특히 물김치에서 매우 빠르게 증가하였다. 관능검사 결과, 첨가는 물김치의 맛과 종합적인 기호도를 증진시키는 효과를 나타내었다. $4^{\circ}C$ 19일간 저장하는 동안 거의 없었으며 약간 증가하였고, 전체적으로 $10^7CFU/g$ 이상으로 유지되었다. 관능평가의 결과와 저장성을 고려하면 클로렐라의 첨가량은...
