Abstract Purple glutinous rice bran (Kum Doi Saket (KUM)) contains high content of edible polysaccharides and anthocyanins has an excellent antioxidant activity. This research aimed to optimize the extraction crude from defatted purple using ultrasonic-assisted (UAE) compared with a hot water (HWE).
