Abstract: Environmental, economic, and safety challenges have provoked packaging scientists producers to partially substitute petrochemical‐based polymers with biodegradable ones. ABSTRACT Pure β‐carotene was encapsulated in 25 Dextrose Equivalent maltodextrin by three drying processes (spray, freeze and drum). Stability studied at 11% 32% RH 25°C, 35°C 45°C.
