The aim of this study was to develop a new formulation soybean and hemp protein fermented yogurt (SHY) evaluate the effects concentration on physicochemical flavor properties yogurts. results indicated that rapidly reduced pH, increased total titratable acidity yogurts due propagation lactic acid bacteria. Stronger influence parameters detected at higher concentration. Yogurt with has potential reduce whey precipitation improve texture rheology compared those control yogurt. key volatile...
The arctic strain of Chlorella sp. (Chlorella-Arc) exists in the coldest and driest ecosystems, it is a new resource active polysaccharides. extraction crude polysaccharide from Chlorella-Arc was optimized using response surface methodology. A yield approximately 9.62 ± 0.11% dry weight obtained under these conditions. Three fractions (P-I, P-II, P-III) were present after purification by 2-diethylaminoethanol Sepharose Fast Flow Sephadex G-100 chromatography. P-IIa fraction demonstrated...
The purpose of this study was to investigate the structural characteristic and its antioxidant a pectic polysaccharide (ASP-3A) extracted purified from soybean hulls. Results morphological characterization according high-performance gel-permeation chromatography, methylation analysis nuclear magnetic resonance spectroscopy etc. showed that ASP-3A composed rhamnose, galactose, galacturonic acid, arabinose, xylose, glucuronic glucose, mannose, glucosamine hydrochloride with molar ratios 1.000...
Soy hull insoluble dietary fiber (SHIDF) extracted from soybean water-soluble polysaccharides enzymatically is a good carbon source for the growth of gut microbiota. Genomics, co-precipitation and proteomics analyses were used to investigate adhesion behavior microbiota toward SHIDF in vitro. After fermentation, content total reducing sugars decreased with increasing fermentation time, but NH3–N first increased then decreased, gas was produced mainly during 8–16 h. The structure abundance...
Summary The effect enzymatic interesterification (EIE) on the functional performances of beef tallow (BT) blended with coconut oil (CO) in varying proportions was investigated. BT and three different CO, containing 20%, 30% or 40% CO were interesterified a solvent‐free system commercial immobilised lipase, Lipozyme TL IM. oils (IOs) also processed into margarines, their textural properties, microstructure as well sensory determined. IO has best properties for margarine production, low...
In this study, five different processes, including hot water (HW-ASP), single enzyme (cellulase, pectinase and papain; C-ASP, PE-ASP, P-ASP), compound-enzyme (cellulose: pectinase: papain = 3:3:1; CE-ASP) for the extraction of soybean hull polysaccharides (ASPs) were employed, characterization prebiotics activity analyzed. These possessed primary structural characteristics, molecular weight distribution, monosaccharide composition, chemical surface morphology, potential particle size, etc.,...
This study aimed to optimize the structure and efficacy of xylooligosaccharides (XOSs) from corn cobs in constipated mice. Structural analysis revealed that XOSs were composed β-Xyl-(1 →4)-[β-Xyl-(1→4)]n-α/β-Xyl (n = 0-5) without any other substituents. XOS administration significantly reduced defecation time, increased gastrointestinal transit rate, restored neurotransmitter imbalance, protected against oxidative stress, reversed constipation-induced colonic inflammation. Fecal metabolite...
