Four cultivars (Bronowicka Ostra, Cyklon, Tornado, and Tajfun) of pepper fruit Capsicum annuum L. were studied for phenolics contents antioxidant activity. Two fractions phenolics, flavonoids (with phenolic acids) capsaicinoids, isolated from the pericarp at two growth stages (green red) their capacity. Both red fruits had higher activities than those green fruits. A comparison capsaicinoid fraction with flavonoid acid respect to activity gave similar results. Phenolic compounds separated...
The properties of edible films derived from corn starch (CS) and methylcellulose (MC) supplemented with fireweed extract (FE; 0.0125-0.05% w/w) were analyzed. Due to their more crystalline structure, the MC significantly stronger (~26 MPa) than CS (~4 MPa). In turn, produced lower water vapor permeability (WVP, 50.12-51.74 vs. 56.52-59.10 g mm m−2 d−1 kPa−1). hydrothermally-disrupted granules contributed high roughness opacity films. FE-supplemented exhibited an intensive yellow color...
Three flavonoid C-glycosides isolated from pepper fruit (Capsicum annuum L.), var. Capel Hot (luteolin 6-C-glucoside, luteolin 6,8-di-C-glucoside and apigenin 6-C-glucoside-8-C-arabinoside), were investigated to determine their antioxidant activity lipophilicity. The was evaluated using in vitro methods generate free radicals hydrophilic (superoxide radical) lipophilic (2,2-diphenyl-1-picrylhydrazyl (DPPH) peroxide radicals) media. Parameters characterising the lipophilicity (log P) of...
Lettuce (Lactuca sativa L.) is a popular vegetable with the health-enhancing properties determined by high levels of antioxidant polyphenols as chlorogenic acids and other derivatives caffeic acid or flavonoids. In this study, changes in phenolic compound profiles lettuce leaves induced application CaCl2 before harvest cold storage were studied. For first time quantitative analysis individual compounds on basis standards isolated from was performed. Compounds identified using HPLC, LC-MS, 1H...
The study evaluated the effect of adding dandelion extract on characteristics raw-ripening pork sausages while reducing nitrite addition from 150 to 80 mg/kg. were made primarily ham (80%) and jowl (20%). process involved curing, preparing meat stuffing, forming links, then subjecting a 21-day ripening period. Physicochemical parameters such as pH, water activity, oxidation-reduction potential compared at beginning production after process. also examined impact protein metabolism in profiles...
This study aimed to determine the health-promoting properties of sweet pepper by comparing activity fractions with variable lipophilicity. Fractions from red pericarp: aqueous (F1), 40% MeOH (F2), and 70% (F3) were analyzed for antiradical (with DPPH• ABTS+•), contents total phenolic compounds (TP), flavonoids (TF), dihydroxycinnamic acids (TDHCA). The anticancer potential was evaluated in vitro using different cancer cell lines: human colorectal carcinoma (HCT116) PC-3 (prostate cell)....
Ethanol extracts of two types pepper (sweet and hot) were separated into fractions with increasing lipophilicity. After drying the fractions, their chemical composition, anti-radical activity in DPPH radical system, cytotoxic against PC-3 HTC-116 cells determined. A detailed qualitative analysis was performed LC-QTOF-MS method. It found that composition did not always reflect biological activity. The highest antiradical detected fraction eluted 40% methanol from sweet pepper. total content...
Abstract In the quest to evade side effects associated with synthetic drugs, mankind is continually exploring natural sources. recent decades, neurodegenerative disorders (NDDs) have surged dramatically compared other human diseases. Flavonoids, naturally occurring compounds, emerged as potential preventers of NDD development. Notably, quercetin and its derivatives demonstrated excellent antioxidant properties in fight against NDDs. Recognizing bee‐collected pollen (BP) a well‐established...
Nowadays, legume plants have been considered not only a source of valuable proteins necessary for the proper functioning and growth body but also bioactive compounds such as peptides, that may be beneficial to human health protect against negative change in food. The aim this study was investigate effect heat treatment on release antioxidant peptides obtained by hydrolysis yellow string beans protein. properties hydrolysates were evaluated through free radical scavenging activities (DPPH...
Sodium nitrite is a multifunctional additive commonly used in the meat industry. However, this compound has carcinogenic potential, and its use should be limited. Therefore, study possibility of reducing amount sodium(III) added to canned from 100 50 mg/kg, while enriching it with freeze-dried blackcurrant leaf extract, was analyzed. The fortification extract confirmed. It contained significant amounts phenolic acids flavonoid derivatives. These compounds contributed their antioxidant...
The occurrence of the DFD defect shortens microbiological stability and reduces consumer acceptance meat. effect a chokeberry leaf extract (ChLE) addition at concentrations 0.01 %, 0.05 % 0.1 on sensory physicochemical properties burgers prepared from meat during refrigerated storage under vacuum for 10 days was assessed. pH, water activity, texture, colour, degree lipid oxidation, content α-tocopherol were measured. significantly influenced lower levels oxidation higher each tested period....
