To decrease the fishy odor of tilapia protein hydrolysates, this study investigated flavor properties fish hydrolysates (FPH) fermented by Hanseniaspora pseudoguilliermondii (FPHY), Lactobacillus plantarum 082 (FPHL) and combined fermentation (FPHLY).
