Fruits, vegetables, and commercial frozen pulps (FP) consumed in the Brazilian diet were analyzed for antioxidant activities using two different methods, one that determines inhibition of copper-induced peroxidation liposome another based on co-oxidation linoleic acid β-carotene. The anthocyanin-rich samples showed highest, concentration-dependent, both systems. In system, at 10 50 μM gallic equivalent (GAE) addition levels, neutral acidic flavonoids red cabbage, lettuce, black bean,...
The objective of this work was to quantify the flavonoids present in foods most commonly consumed by Brazilian population. predominant found largest abundance all analyzed vegetables were glycosides quercetin. In lettuce, a small amount luteolin also detected. sweet pepper, quercetin and both present. White onion [48-56 mg/100 g fresh weight (FW), expressed as aglycon], red (40-100 FW), lettuce (67-67.2 arugula (41-118 chicory (18-38 FW) highest total flavonoids. fruits, concentrations peel...
Foods provide essential and bioactive compounds with health-promoting properties such as antioxidant, anti-inflammatory, hypocholesterolemic activities, which have been related to vitamins A, C, E phenolic flavonoids. Therefore, the aim of this work was identify potential sources through determination flavonoids ellagic acid contents in vitro antioxidant capacity α-glucosidase α-amylase inhibitory activities Brazilian native fruits commercial frozen pulps. Camu-camu, cambuci, uxi, tucumã...
Six strawberry cultivars grown on the same commercial plantation in Brazil were evaluated for their chemical composition and quality attributes at ripe stage. The profiles of main soluble sugars, ascorbic acid, anthocyanins also obtained during developmental stages. Results showed significant differences among all investigated parameters. Cv. Campineiro an average value texture 0.63 N, half found cv. Oso Grande. Anthocyanin content ranged from 13 (cv. Campineiro) to 55 Mazi) mg/100 g. Total...

The objective of this work was to characterize exotic fruits (cambuci, araça-boi, camu-camu, jaracatia, araça) and commercial frozen pulps (araça, cambuci, umbu, coquinho, pana, native passion fruit, cagaita) from Brazil in relation their bioactive compounds contents antioxidant capacity. Camu-camu (Myrciaria dubia) presented the highest vitamin C total phenolics (397 1797 mg/100 gf.w., respectively) DPPH • scavenging Coquinho (Butia capitata) also showed a significant content (43 gf.w.)....
Ripening affects the quality and nutritional contents of fleshy fruits, papayas are climacteric fruits very susceptible to postharvest losses due fast softening caused by ethylene. This paper reports changes in respiration, ethylene production, pulp color firmness, along with soluble sugars major carotenoids, during ripening 'Golden' papaya, an important Brazilian cultivar that has been exported North American European markets. The results obtained for nontreated ethylene- or 1-MCP-treated...
Abstract BACKGROUND: The objectives of this study were (1) to evaluate the content ellagic acid in fruits consumed by Brazilian population, including native ones; (2) further characterize rich sources relation ascorbic acid, phenolics contents and vitro antioxidant capacity; (3) distribution effect ripening stage on ellagitannins jabuticaba ( Myrciaria jaboticaba ). free derivatives such as was analyzed using high‐performance liquid chromatography (HPLC). RESULTS: Ellagic detected 10 out a...
The present work reports amounts of flavonoids and phenylpropanoids culms three sugarcane varieties raw juice, syrup, molasse VHP sugar. antioxidant activity those materials was evaluated by the DPPH β-carotene/linoleic acid methods. predominant phenolics in were (caffeic, chlorogenic coumaric acids), while flavones (apigenin, tricin luteolin derivatives) appeared lower amounts. Differences noted either among phenolic profiles or between products. activities solutions from most samples...
The chemical composition and in vitro antioxidant capacity (AC) of the two most commercialized species jaboticaba, Sabará (Myrciaria jaboticaba) Paulista cauliflora), were compared different fruit parts (skin, pulp seeds) at ripening stages. Both presented similar mineral centesimal compositions, found to be rich sources Mn (1.8–2.7 mg/100 g DW) Cu (1.0 DW). Except for anthocyanins, phenolic concentrations greater amounts than Paulista. Ellagic acid derivatives (EA) contents varied according...
The chemical composition and some physico-chemical characteristics of the flour obtained from eight different banana varieties are presented. was prepared by freeze-drying a homogenate green pulp. Amylose, starch, dietary fiber, protein, ash, moisture lipid contents were determined. Viscosity gelatinization starch also investigated. Banana is rich in granules. Peak temperature varied 68 to 76 °C according variety. All them showed an increase viscosity during cooling but variety Ouro colatina...
Seed coats and cotyledons from 25 Brazilian 3 Peruvian bean cultivars were investigated in relation to their phenolic profiles antioxidant capacity. Condensed tannins, anthocyanins, flavonols such as kaempferol quercetin glycosides mostly found seed coats. Cotyledons rich acids, ferulic, sinapic, chlorogenic, other hydroxycinnamic acids. In general, the coat color pattern type of cultivar showed an important influence on variability levels, respectively. Total phenolics capacity assessed by...
The seeds of Parana pine (Araucaria brasiliensis syn. Araucaria angustifolia), named pinhão, are consumed after cooking and posterior dehulling, or they used to prepare a flour employed in regional dishes. Native people that live the South Brazil usually consume baked pinhão. As result cooking, white become brown on surface due migration some tinted compounds present seed coat. In this work, proximate composition, minerals, flavonoids, glycemic index (GI) cooked raw pinhão were compared. No...
Fruits of seven fully ripened strawberry cultivars grown in Brazil (Dover, Camp Dover, Camarosa, Sweet Charlie, Toyonoka, Oso Grande, and Piedade) were evaluated for total phenolics, antioxidant activity based on DPPH radical scavenging assay, functionality such as inhibition alpha-amylase, alpha-glucosidase, angiotensin I-converting enzyme (ACE) relevant potentially managing hyperglycemia hypertension. The phenolics content ranged from 966 to 1571 microg gallic acid/g fruit fresh weight...
