Abstract Naturally fermented milk (NFM) products are popular ethnic foods in Arunachal Pradesh and Sikkim states of India. The present study is the first to have documented bacterial community 54 samples NFM viz. chhurpi , churkam, dahi gheu / mar by high-throughput Illumina amplicon sequencing. Metagenomic investigation showed that Firmicutes ( Streptococcaceae Lactobacillaceae ) Proteobacteria Acetobacteraceae were two predominant members communities these products. Lactococcus lactis...

Abstract Background Meyerozyma guilliermondii (anamorph Candida ) and caribbica fermentati are closely related species of the genetically heterogenous M. complex. Conventional phenotypic methods frequently misidentify within this complex also with other Saccharomycotina CTG clade. Even long-established sequencing large subunit (LSU) rRNA gene remains ambiguous. We faced similar problem during identification yeast isolates from indigenous bamboo shoot fermentation in North East India. There...

Lactobacillus plantarum YO175 and OF101 isolates from Nigerian traditional fermented cereal gruel 'ogi', were investigated on the basis of their capability to produce exopolysaccharide (EPS) sucrose modified deMan Rogosa Sharpe medium (mMRS). Functional groups analysis EPSs produced (EPS-YO175 EPS-OF101) by Fourier-transform infrared (FT-IR) spectroscopy revealed presence -OH, C=O C-H groups. The chemical composition EPS-YO175 EPS-OF101 showed 87.1% 80.62% carbohydrates 1.21% 1.47% protein....

Abstract Palm wine, the most commonly consumed traditional alcoholic beverage in Western Africa, harbours a complex microbiota and metabolites, which plays crucial role overall quality value of product. In present study, combined metagenomic metabolomic approach was applied to describe microbial community structure metabolites profile fermented saps from three palm species ( Elaeis guineensis , Raphia hookeri Borassus aethiopum ) Côte d’Ivoire. Lactobacillaceae (47%), Leuconostocaceae (16%)...

The effect of fermented foods on healthy human gut microbiota structure and function, particularly its seasonal preference frequent long-term consumption, has been largely uncharacterised. Here, we assess the metabolite composition 78 Indian agrarian individuals who differ in intake milk soybean products by sampling during hot-humid summer, autumn dry winter. Here show that, shifts between Prevotella- Bifidobacterium/Ruminococcus-driven community types, or ecological states, associated fatty...

In this study, bacterial composition of iru produced by natural, uncontrolled fermentation Parkia biglobosa seeds was assessed using culture-independent method in combination with culture-based genotypic typing techniques. PCR-denaturing gradient gel electrophoresis (DGGE) revealed similarity DNA fragments the two extraction methods used and confirmed diversity 16 samples from different production regions. sequencing highly variable V3 region 16S rRNA genes obtained PCR-DGGE identified...

Microbial community structure and population dynamics during spontaneous bamboo shoot fermentation for production of 'soidon' (indigenous fermented food) in North-east India were studied using cultivation-dependent cultivation-independent molecular approaches. Cultivation-dependent analyses (PCR-amplified ribosomal DNA restriction analysis rRNA gene sequencing) (PCR-DGGE, qPCR Illumina amplicon conducted on the time series samples collected from three independent indigenous soidon batches....

Cultivation-independent investigation of microbial ecology is biased by the DNA extraction methods used. We aimed to quantify those biases comparative analysis metagenome mined from four diverse naturally fermented foods (bamboo shoot, milk, fish, soybean) using eight different with cell lysis principles. Our findings revealed that enzymatic yielded higher eubacterial and yeast metagenomic food matrices compared widely used chemical mechanical Further bacterial community structure Illumina...

Abstract Endophytes of Panax have the potential to produce their host plant secondary metabolites, ginsenosides. sokpayensis, an endemic traditional medicinal Sikkim Himalayas was explored for isolation endophytic fungi. In present study, we isolated 35 fungal cultures from rhizome P. sokpayensis and screened ginsenosides production by HPLC comparing peak retention time with that standard The analysis revealed out isolates, mycelial extracts four endophytes (PSRF52, PSRF53, PSRF49 PSRF58)...
