We aimed to evaluate the anti-fatigue effects of oyster polypeptide (OP) fraction and its regulatory effect on gut microbiota in mice.
Abstract Hyperlipidemia poses a serious threat to human health and evaluating the ability of natural active substances regulate disorders lipid metabolism is focus food functionality research in recent years. Bioactive peptides are distinguished by their broad range sources, high nutritional content, ease absorption use body, determining sequences. have wide potential applications area medicines food. The regulation disorder caused bioactive from different sources provides reference for...
This study was conducted to assess the potential application of ultrasonic treatment enhance tenderness whelk (Buccinum undatum) meat. The optimum conditions for maximum tenderization effect were determined using response surface methodology by a three-level factorial Box-Behnken design optimization three variables. variables found as follows: ultrasound power at 200 W, time 9.6 min, and temperature 45°C. resulted comparable traditional enzymatic methods. Furthermore, disruption muscle...
Quantitative structure-activity relationship (QSAR) modeling was used to screen and predict peptides with high ACE-inhibitory (ACE-I) activity from Scomber japonicus muscle hydrolysates. Four QSAR models were established based on different amino acid descriptors, out of which the model 5z-scale best for ACE-I prediction. Two potential predicted through coupled in silico screening, PLITT has highest IC50 as 48.73 ± 7.59 μM. Molecular docking suggested that hydrogen bond, attractive charge,...
