This research explored the use of oleogel which was comprised camellia oil instead solid fat in ice cream, and not only optimized process cream production by single factor response surface experiment, but also characterized it. By comparing to two creams (camellia butter cream), results showed that overrun rate higher than melting lower cream. Besides, hardness moderate, first dropping time no significant difference with creams, whereas longer Both viscosity globule instability highest. The...

Aflatoxin B1 (AFB1), a potent food-borne hepatocarcinogen, is the most toxic aflatoxin that induces liver injury in humans and animals. Species-specific sensitivities of aflatoxins cannot be fully explained by differences metabolism AFB1 between animal species. The gut microbiota are critical inflammatory injury, but it remains to reveal role AFB1-induced injury. Here, mice were gavaged with for 28 days. Then, modulation microbiota, colonic barrier, pyroptosis inflammation analyzed. To...

Pterostilbene (PTE) grapeseed oil emulsion was prepared by spray drying. The effects of drying temperature (100 °C–180 °C) on the physical properties, encapsulation efficiency PTE, and volatile organic compounds were studied. microcapsule powder formed at 140 °C had a high yield (53.14%), good particle integrity, small size, corresponding reconstituted droplet size. With increasing from 100 to 180 °C, PTE in decreased 74.6% 55.2%. results electronic nose GC-IMS showed that aroma components...

The ecological conditions of urban areas have been deteriorating in some aspects due to population growth and increasing expansion, with significant effects on human health. Impervious surface are an important indicator environmental change, therefore quickly accurately estimating impervious is essential monitoring the dynamics change activities their quality. Currently, few methods that applied surfaces capable providing results accurately. Accordingly, this study proposes a new index,...

Aflatoxin B1 (AFB1) causes serious immunotoxicity and has attracted considerable attention owing to its high sensitivity common chemical-viral interactions in living organisms. However, the of different species AFB1 widely varies, which cannot be explained by metabolism species. The gut microbiota plays a crucial role immune system, but interaction with AFB1-induced still needs determined. Our results indicated that exposure disrupted structure damaged barrier, caused translocation...

In this study, pectin (PEC) and pea protein isolate(PPI) was successfully used to create complexes as a novel delivery system for pterostilbene (PT). When the mass ratio of PEC PPI 0.5, particle size ζ-potential PPI-PEC-PT were 119.41 ± 5.68 nm -23.26 0.61 mV, respectively, encapsulation efficiency (EE) PT 90.92 2.08%. The photochemical stability enhanced after encapsulation. results molecular docking multispectral analysis demonstrated that binding spontaneous mostly fueled by hydrophobic...

In the present study, a novel lytic Vibrio parahaemolyticus phage, vB_VpaP_DE10, was isolated from sewage samples collected in Guangzhou city, China. Transmission electron microscopy revealed that phage vB_VpaP_DE10 has an icosahedral head (52.4 ± 2.5 nm) and short non-contracted tail (21.9 1.0 nm). Phage lysed approximately 31% (8/26) of antibiotic-resistant V. strains tested. A one-step growth curve showed relatively long latency time 25 min burst size ~19 PFU per cell. The genome is...

Using indica rice flour as the main raw material and adding blueberry residue powder, expanded powder (REP) containing was prepared by extrusion comminution. The effects of processing on nutritional components, color difference, antioxidant performance volatile organic compounds (VOCs) with or without were compared. results showed that contents fat total starch decreased significantly after extrusion, while dietary fiber increased relatively. Especially, effect DPPH ABTS+ free radical...

Black soldier fly, Hermetia illucens (L.) (Diptera: Stratiomyidae), larvae are suspected to inhibit house flies, Musca domestica Muscidae), seeking oviposition sites. However, the mechanisms regulating these interactions not well known. In this study, a Y-tube olfactometer was used determine whether black fly eggs, larvae, puparia (without pupae inside), adult carcasses, or resulting frass of decrease attractiveness flies an substrate (i.e., sugar and wheat bran diet, as control).
