In this study, the effects of γ-aminobutyric acid (GABA) on physio-biochemical metabolism, phenolic accumulation, and antioxidant system enhancement in germinated wheat under drought stress was investigated. The results showed that exogenous GABA reduced oxidative damage seedlings caused by enhanced content phenolics, with 1.0 mM being most effective concentration. Six acids were detected bound form, including p-hydroxybenzoic acid, vanillic syringic p-coumaric ferulic sinapic acid. However,...
Changes in physio-biochemical metabolism, phenolics and antioxidant capacity during germination were studied eight different wheat varieties. Results showed that enhanced sprout growth, caused oxidative damage, but accumulation. Ferulic acid p-coumaric the main phenolic acids sprouts, dihydroquercetin, quercetin vitexin flavonoids. The content of Jimai 44 was highest on 2th 4th day germination, Bainong 307 6th day. flavonoid Hei jingang whole germination. enzymes activities phenylalanine...
Inhibition of Salmonella by Lactobacillus has been a popular research topic for decades; however, the inhibition potential chicken-derived not yet studied. In this study, 89 strains from chicken intestines were isolated national standard method, Gram staining, physiological, and biochemical experiments molecular sequencing; The characteristics derived against 10 (S. Enteritidis SE05, SC31, SC21, SC72 SC74, SC79, SC83, SC87; S. bongori SE47; Typhimurium, SC85) detected agar zone, results...
Abstract The high moisture and nutrient contents of spiced beef make it popular with consumers but present challenges for its storage, as spoilage is a common phenomenon. Therefore, identifying packaging methods to reduce during this study investigated the effects 5% O 2 (low oxygen), 70% CO (high carbon dioxide), /70% /25% N (compound group) on lipid oxidation in test groups vacuum‐packed group (control) at storage temperatures 4, 25, 60°C. pH, thiobarbituric acid (TBA), anisidine value...
Plant-based meat analogues offer an environmentally and scientifically sustainable option as a substitute for animal-derived meat. They contribute to reducing greenhouse gas emissions, freshwater consumption, the potential risks associated with zoonotic diseases linked livestock production. However, specific processing methods such extrusion or cooking, using various raw materials, can influence survival growth of spoilage pathogenic microorganisms, resulting in differences between...
Summary In this study, changes in physiological and biochemical metabolism, phenolics antioxidant capacity of six different Chinese pea varieties during germination were investigated. Results showed that had a positive effect on the indexes bioactive substances pea. The bud length, root fresh weight respiration rate sprouts increased with time. content free bound germinated peas significantly. Meanwhile, activated phenylalanine ammonia‐lyase (PAL), cinnamate 4‐hydroxylase (C4H) 4‐coumaric...
Lactic Acid Bacteria (LAB) regulate and maintain the stability of healthy microbial flora, inhibit adhesion pathogenic bacteria promote colonization beneficial micro-organisms. The drug resistance pathogenicity Salmonella enteritis SE47 isolated from retail eggs were investigated. Meanwhile, Enterococcus faecalis L76 Lactobacillus salivarius LAB35 intestine chicken. With as indicator bacteria, diameters inhibition zones 12 mm 8·5 mm, respectively, by agar circle method, which indicated that...
Pork skin and duck are highly favored by consumers in China, high-temperature processing methods widely employed cooking food preparation. However, the influence of treatment on microbial communities within pork remains unclear. In this study, a method simulating process was utilized to treat samples at temperatures ranging from 60 °C 120 °C. The findings revealed that significantly altered both skin. Heat exposure resulted decrease diversity induced changes relative abundance specific...
ABSTRACT This study delves into the role of lactic acid bacteria (LAB) surface proteins in cell adhesion and immunoregulation. Using fluorescence microscopy, we observed distinct patterns on various types. LAB demonstrated concentration‐dependent inhibition Salmonella adhesion, with LAB69 exhibiting potent antagonistic effects. Genetic expression analysis revealed nuanced responses key genes (MD2, TLR4, IL‐10, MUC3, MIF) across different types, highlighting diverse immunomodulatory effects...
Increasing evidence shows that selenium and polyphenols are two types of the most reported compounds in tumor chemoprevention due to their remarkable antitumor activity high safety profile. The cross-talk between is a hot research topic, combination valuable strategy for fighting cancer. current work investigated anti-peritoneal carcinomatosis (PC) effect nanoparticles (SeNPs) green tea (Camellia sinensis) polyphenol (-)-epigallocatechin-3-gallate (EGCG) mice bearing murine hepatocarcinoma...
