The properties of microencapsulated fish oil, prepared with spray drying and freeze-drying processes using emulsions konjac glucomannan (KGM) soybean protein isolate (SPI) was investigated. Comparative analysis microcapsules showed the encapsulation efficiency were 90.10% 83.52% respectively. Scanning electron microscopy (SEM) confocal laser scanning (CLSM) results exhibited that spherical particles a compact structure, while irregular pore-like structure. Release kinetics test further...
Here, we report a new method that employs simple and readily available small molecule, 2-cyano-6-hydroxybenzothiazole (CBT), to selectively quench the nucleophilicity of an N-terminal Cys-containing leaving group, thereby shifting equilibrium peptidyl asparaginyl ligase (PAL)-mediated ligation toward product side. This can be applied not only N- C-terminal modifications proteins but also efficiently mediate protein-protein ligation.
The impact of various amounts konjac glucomannan on the structural and physicochemical properties gluten proteins/dough at different periods frozen storage is evaluated in present study. As time was prolonged, molecular weight free sulfhydryl content proteins tensile dough all decreased. addition reduced variations rheological proteins/dough. Frozen with 2.5% added showed highest water binding capacity retarded migration water. Scanning electron microscopy differential scanning calorimetry...
Abstract The development of 3D‐printable and injectable biocompatible hydrogels with robust mechanical adhesive properties useful for biomedical applications remains a great challenge. Herein, stepwise‐triggered dual reversible/irreversible covalent linkages are engineered between two functionalized polymers, glycidyl methacrylate‐modified polyvinyl alcohol (PVA‐GMA) oxidized sodium alginate tailed 3‐aminophenylboronic acid (OSA‐PBA), allowing the availability PVA‐GMA/OSA‐PBA (PGOP)...
Influences of different enzymatic hydrolysis degrees konjac glucomannan (KGM) with various addition proportions on the structural characteristic gluten protein and dough properties were evaluated. Results revealed that KGM decreases free sulfhydryl freezable water content dough, had more beneficial effects strengthening structure by raised molecular weight proteins increased disulfide bonds β-sheet content, especially 15 min treatment (KGM II). Besides, microstructure observation thermal...
Chito-oligosaccharides (COSs) were encapsulated by the film-ultrasonic method into three nano-liposomes, which uncoated liposomes (COSs-Lip), chitosan-coated (CH-COSs-Lip), and sodium alginate (SA)/chitosan (CH)-coated (SA/CH-COSs-Lip). The physicochemical structural properties, as well stability digestive characteristics, of all nano-liposomes assessed in current study. Thereafter, characteristics intestinal absorption transport investigated Caco-2 cell monolayer. All showed a smaller-sized...
A comprehensive summary of how different endogenous molecules' metabolic processes (including H 2 O , iron, lactate, GSH, and lipid metabolisms) impact Fenton chemistry is provided in this perspective for advancing chemodynamic therapy against cancer.
Abstract BACKGROUND Maltose is an essential derivative of starch. To understand the processability and stability maltose‐containing foods, material characterization phase state transition from its amorphous required. Although crystallization maltose well understood, few studies have reported relationship between glass temperature ( T g )‐related molecular mobility. In this study, water sorption, crystallization, ‐related α‐relaxation, corresponding time factor for / whey protein isolate...
Main observation and conclusion The synthesis of an Asp lactam derivative A‐183, a selective inhibitor Factor 7a with good anticoagulant antithrombotic activity, is described. Our depends on the use removable backbone modification (RBM) strategy to prevent aspartimide formation, which thwarted all attempts synthesize this target using direct solid‐phase peptide synthesis. Validation RBM in second was also accomplished. therefore proposed as general method for cyclic peptides.
Lactam cyclic peptides are a class of interesting and pharmaceutically active molecules, but their previous syntheses have required the use heavy metals and/or forcing conditions. Here, we describe efficient application previously reported tert-butyl disulfide-protected amino acids in efficient, solid-phase synthesis series lactam under mild, metal-free
Summary In this study, soybean protein isolate (SPI)‐konjac glucomannan (KGM) conjugates were fabricated via the Maillard reaction and their potential to improve enzymatic hydrolysate with ACE inhibitory activity stability was assessed. Briefly, we loaded into SPI‐KGM using a pH‐driven method. Thereafter, transport pathway of angiotensin‐converting enzyme (ACE) (ACE‐SPI‐KGM) core–shell nanogels investigated CaCo‐2 cell monolayer. The results microstructure, encapsulation efficiency,...
A classic problem in preservation is the microbes can grow low-moisture foods. In this paper, water sorption, and thermodynamic properties of glucose/WPI solid matrices were measured, while their molecular mobility was analyzed associated with microbial growth D. Hansenii at various aw 30 °C. Although sorption isotherms, Tg, relaxation processes studied affected by WPI, showed highly dependent on rather than aw. Hence, we introduced usability (Uw), derived from difference between...
Appropriate pretreatment of proteins and addition xanthan gum (XG) has the potential to improve stability oil-in-water (O/W) emulsions. However, factors that regulate enhancement mechanism are still not clear, which restricts realization improving emulsion by directional design its structure. Therefore, effects whey protein micro-gel particles (WPMPs) WPMPs-XG complexes on O/W were investigated in this article provide theoretical support. WPMPs with different structures prepared (controlled...
Herein, we report a peptide o -aminoanilide-mediated NCL-assisted DADA strategy for the synthesis of large-span active disulfide bridge surrogates containing only Gln–Cys or Asn–Cys ligation sites.
Physicochemical properties of white waxy wheat flour and glutinous rice flour were studied comparatively in this work. The swelling power, rapid viscosity analyzer (RVA), water-retaining capacity, paste transparency, freezing thawing stability, digesti...
