This study evaluated the effects of four highland barley proteins (HBPs), namely, albumin, globulin, gliadin and glutenin, on short-term retrogradation starch (HBS). The findings reveal that HBPs could reduce viscosity, storage modulus hardness HBS, with albumin globulin showing more prominent effects.
