The microbial composition and volatile components of fermented grains (FG) pit mud (PM) are crucial for the quality flavor compound-flavor baijiu (CFB). physicochemical indices, culturable microorganisms, communities, FG PM were analyzed correlated in our research. Considering PM, amplicon sequencing was used to analyze community detected by headspace solid-phase microextraction-gas chromatography-mass spectrometry (HS-SPME). For FG, redundancy analysis correlation perfume Circos clarify...
We identified a novel leaderless bacteriocin, toyoncin, produced by B. toyonensis XIN-YC13. Toyoncin shows good pH and heat stability, it has specific antimicrobial activity against cereus L. monocytogenes (two important foodborne pathogens), likely destroying their cell membrane integrity.
Maotai-Luzhou–flavoured jiupei was investigated regarding dynamic changes in its microbial community, accumulation of volatile compounds, physicochemical properties and enzyme activity. The results indicated that Lactobacillus (0.04%–0.97%) Aspergillus (30.57%–71.02%) were the core genera jiupei. Burkholderia, Acetobacter, Kroppenstedtia, Pantoea, Rhizopus, Candida Thermomyces (relative abundance >0.05%) unique dominant fermented grains. Of all compounds jiupei, content acids, alcohols...
In recent years, bacteriocins have attracted considerable interest for use as natural food preservatives against spoilage and pathogenic microorganisms. Recent studies shown that the strains of Bacillus cereus group produce a range highly diverse bacteriocins. this study, we screened large number isolated one strain, sp. Xin1, with antimicrobial activity several food-borne pathogens. A novel circular bacteriocin, bacicyclicin XIN-1 (MW: 5848.1719 Da), was purified from culture supernatant...
High-throughput sequencing was used to elucidate the microbial community of strong-flavor Daqu (SFD) (surface and central parts) produced in different Chinese regions, moisture other six kinds quality indicators SFD were detected. In addition, Spearman correlation coefficient identify relationships between indicators. sample groups surface parts, differential fungal genus Alternaria, whereas bacteria genera Weissella, Pediococcus Leuconostoc. analysis showed that Rhizopus, Stemphylium,...
The applications of carvacrol are limited due to its poor stability, water solubility and high volatility. Herein we fabricated ovalbumin–carvacrol gel nanoparticles then improved solubility, stability antibacterial property carvacrol.
Bacteriocins are bacterial-derived peptides that exhibit antimicrobial activity and can be used as food preservatives. Here, using the indicator strain Bacillus cereus CMCC63301, we screened identified a thuringiensis LX43 exhibits potent harbors putative leaderless bacteriocin gene cluster (thn cluster). Five novel bacteriocins, thuricin A1, A2, A3, A4, A5, encoded by thn cluster, were purified identified. Thuricin A5 was regarded representative showed remarkable against foodborne pathogens...
Purpose Monascus pigment was widely applied in food processing industry as functional additive, so more attention paid to the fermentation optimization of production. Therefore, this paper aims evaluate best possible fermentative conditions for maximum production biopigment using submerged (SFM) and solid state (SSF) by purpureus HBSD 08. Design/methodology/approach The produced an SMF SSF with optimized substrate achieve higher yield. antioxidant activity evaluated DPPH radical scavenging...
Abstract A monofunctional catalase from Serratia marcescens SYBC08 produced by liquid state fermentation in 7 liter fermenter was isolated and purified ammonium sulfate precipitation (ASP), ion exchange chromatography (IEC), gel filtration (GF) characterized. Its sequence analyzed LC‐MS/MS technique gene cloning. The highest production (20,289 U · ml –1 ) achieved after incubation for 40 h. had an estimated molecular mass of 230 kDa, consisting four identical subunits 58 kDa. High specific...
The chemical compositions, bioactive ingredients, and in vitro antitumor activity were analyzed using water extracts from the dried fermented mycelia of Cephalosporium sinensis (C1), Paecilomyces hepiali (C2), Cordyceps cicadae (C3), as well fruiting bodies C. militaris (C4). Total amino acid content was highest C3, compared with C1, C2, C4, natural (S1). contents Fe, Zn, Mn, Ca Zn/Cu ratio C1-C3 obviously different than those C4 S1, whereas Na K/Na ratios S1 C1 C2. Except for cordycepin not...
Summary This study identified and compared the health‐related components bioactivity of five fruit juices following Lactobacillus plantarum NRRL‐B‐14768 fermentation subsequent simulated gastrointestinal digestion. After 48‐h fermentation, vitamin C total phenol content orange juice, polysaccharide watermelon juice functional elements in tomato were relatively high. FTIR spectroscopy was used to reveal changes phenols organic acids. During displayed best 1,1‐diphenyl‐2‐picrylhydrazyl (DPPH)...
In this study, the production of yellow pigment by Monascus purpureus upon addition sucrose esters under submerged fermentation was significantly promoted. When integrated with immobilised using 0.75 g corn cob as carrier for 5 days, yield reached 39.24 AU/50 mL and 4.12 times that control group. integrative five-batch gave a higher than free fermentation. The extracellular in fourth batch maximum value 56.71 mL. Transcriptome analysis revealed effectively regulated pyruvate metabolism...
Abstract A high‐catalase‐producing strain, which was isolated from sludge containing hydrogen peroxide, identified as Serratia marcescens SYBC08 by 16S rDNA sequence analysis. spp. reported non‐spore‐forming bacterium (except S. sakuensis ), but in our study electron microscopic observation revealed that the strain did produce spores. The content of main fatty acid C 16:0 (14.8%) significantly different (33.2%) and DSM 30121 T (34.8%), biochemical characteristics were not identical to those...
Purpose The Monascus pigment has been widely applied in the food processing industry as a functional additive. Lovastatin and polysaccharides are two important bio-active materials found . Citrinin is considered mycotoxin. Thus, it to produce high yields of intracellular pigments with lovastatin polysaccharides, while maintaining low citrinin under liquid fermentation. Design/methodology/approach pigments, lovastatin, citrinin; biomass; reducing sugar content purpureus HBSD 08 were...
Abstract BACKGROUND Natamycin is an antibiotic which shows strong inhibition and wide spectrum against most fungi. It produced mainly through batch fed‐batch fermentations, are characterized by long culture time, low productivity enormous discharge of waste biomass. In the present study, a new strategy using immobilized cells was proposed for continuous natamycin production via repeated to address these shortcomings. RESULTS A combination cell immobilization employed continuously produce in...
This study aimed to elucidate the molecular mechanisms through which succinic acid and fluconazole stimulate Monascus pigment biosynthesis under liquid fermentation conditions. The yield was significantly improved by adding 0.35 g·L-1 or 1.5 fluconazole. Transcriptome sequencing RT-qPCR confirmation were performed reveal transcriptome changes. results indicated that addition of decreased mRNA expression genes involved in fatty while increasing pyruvate metabolism. Fluconazole down-regulated...
