本研究の目的は,制菌効果のある静水圧下,制菌効果のある炭酸ガス圧下において,小麦自身がもつ内在性酵素の活性を利用するドウの新規調製法の可能性を見いだすことである.静水圧処理は50 MPa 30℃,炭酸ガス圧処理は1.0 40℃で制菌効果を確認することができた.本加圧条件下において,小麦粉内在性酵素による澱粉の分解作用によると考えられる糖の増加が確認できたのに加えて,呈味性遊離アミノ酸として知られるグルタミン酸の増加が確認できた.これらのことから良好な甘みと香ばしい外皮,そしてイーストの活性促進というメリットが期待できる.さらに,加圧処理状態においてドウに人為的にアミラーゼなどの酵素を添加することで,さらなる糖の増加や,グルテン分解によるアレルギー対策に寄与するといった活用法の開発が期待される.
