본 연구에서는 제주에서 자생하는 동백나무 겨우살이의 용매별 기능성 성분 및 항산화 활성에 대한 평가를 시행하였다. 총 폴리페놀 플라보노이드 함량을 분석한 결과 모두 70% 에탄올 추출물에서 높은 보였다. DPPH, hydrogen peroxide 소거능, ferrous ion chelating, 환원력을 통해 활성을 측정하고 이를 EC<sub>50</sub> EC<sub>0.5</sub>로 나타낸 모든 실험에서 에탄올을 용매로 사용한 겨우살이 나타내었다. 상기의 결과를 통하여 함량과 활성간의 깊은 관련성을 예상해볼 수 있었고 상관관계를 분석해 결과, 활성이 0.01 0.05 수준에서 유의한 보임을 확인할 있었다. 이러한 결과들을 잠재적 항산화제로서의 제주산 동백 가능성이 있다고 판단되어 향후 구체적인 연구가 필요하다고 사료된다. 본 연구에서는 추출용매에 첨가하는 산의 종류 및 농도를 달리하여 검정콩으로부터 안토시아닌 프로안토시아니딘 색소의 추출효율에 대하여 연구하였다. 종류는 hydrogen chloride(HCl), acetic acid, formic phosphoric acid citric acid였으며, 사용된 농도는 0.1, 0.2, 0.3, 0.5 0.7%였고 80% 메탄올을 추출용매로 사용하였다. 총 함량은 농도에 따라 0.74~1.74 mg/g 범위였으며 0.3% HCl 처리구가 가장 높았다. 검정콩의 주요 안토시아닌은 C3G, D3G Pt3G였으며 구성 중 C3G의 비율이 2.01~5.29 범위로 포도씨나 팥의 프로안토시아닌보다 더 많은 양이 함유되어 있었다. 연구 결과로부터 안토시아닌과 프로안토시아니딘의 추출 시 농도가 중요한 변수이며, 최적 추출조건은 HCl을 포함하는 메탄올이라 판단된다.

추출 온도와 시간에 따른 옻나무 부위별 추출물의 총 페놀 및 플라보노이드 함량과 항산화활성을 측정하였다. 총페놀 함량은 온도 160℃에서 47.82 mg GAE/g으로 가장 높았으며, 100℃ 이하의 온도에서는 유의적인 차이가 없었으나 120℃ 이상의 시간 3시간까지는 증가하다가 5시간에서는 감소하였다. 플라보노이드는 온도가 증가함에 따라 증가하여 140℃, 1시간에서 8.04 CE/g으로 높은 함량을 나타내었다. DPPH 라디칼 소거활성은 시간의 증가에 3시간에서 34.23 TE/g으로 그 이후에는 ABTS 소거활성과 유사하였고 140℃에서 3시간 추출한 수피 추출물에서 51.58 AEAC/g으로 높게 나타났다. 페놀과 DPPH와 소거활성을 감안할 때 효율적인 조건은 140℃와 3시간이었다.

가온숙성조건에 따른 도라지의 이화학적 특성 및 항산화 활성의 변화를 살펴보기 위하여 도라지를 알루미늄호일필름에 포장한 후 60~80°C에서 5~50일간 숙성시켜 pH, 총산도, 갈변도, 5-HMF 함량, 총 폴리페놀 DPPH ABTS 라디칼 소거활성을 측정하였다. 숙성온도와 기간이 증가함에 따라 도라지 물 추출물의 pH는 5.22에서 4.17까지 감소하였으며, 총산도는 0.265에서 0.998 lactic acid eq%까지 증가하였다. 갈변도와 함량은 숙성온도 기간에 각각 0.092~1.002와 0.00~50.40 mg/g 범위에서 숙성이 진행됨에 0.589~2.358 증가하였으며, 소거활성도 0.149~1.244 0.354~1.509 mg Trolox eq/g 숙성조건에 활성들 간에 높은 상관관계가 있었으며, pH와 -0.910(P<0.01), 0.880(P<0.01), 함량과 소거활성은 0.885(P<0.01)와 0.745(P<0.01)로 양의 상관관계를 나타내었다....

본 연구에서는 야생화로부터 채밀한 제주 지역 벌꿀 및 벌집채꿀의 페놀성분 분석과 항산화 활성 비교평가를 시행하였다. 총 폴리페놀 플라보노이드 함량 측정 결과 물을 용매로 사용한 벌집채꿀에서 가장 높은 함량을 나타냈다. 또한 벌집채꿀 모두 농도 의존적으로 활성이 증가하는 양상을 보였으며, 이를 EC<sub>50</sub> EC<sub>0.5</sub> 값으로 환산한 벌집채꿀이 벌꿀에 비해 통계적으로 유의하게 활성을 나타내었다. 상기의 결과를 종합하여 봤을 때 함량과 활성간의 연관성이 있다는 것을 추측 해볼 수 있었고 상관관계를 통해 분석한 결과, 페놀 성분의 유의한 나타냄을 확인할 있었다. 이러한 결과들은 잠재적 천연식품소재로의 가능성을 시사하며 향후 이에 대한 체계적인 연구가 필요하다 사료된다. 본 연구는 몇 가지 식용 장미꽃 품종에 대한 새로운 식품소재 개발의 가능성을 살펴보기 위하여 기능 성분 및 항산화활성을 평가하였다. 총 폴리페놀 플라보노이드 함량은 덩굴장미가 각각 93.59 mg GAE/g 9.12 CE/g으로 높았으며, 아이스윙이 62.76 2.72 낮았다. ABTS와 DPPH 라디칼 소거능은 콜로라도 품종에서 0.45 0.52 AAE/mg으로 높았다. 페놀산 화합물은 3.13 mg/g으로 가장 높았으며 콜로라도, 온누리, 아이스윙 순으로 낮아져 항산화 활성과 유사한 경향이었다. 색도 중 a값은 0.93~19.69 범위였으며, 높은 값을 나타내었다. 안토시아닌 8.58 mg/L로 프로안토시아니딘 콜로라도와 1.82 2.50 CE/g의 나타내었고 온누리와 아이스윙은 검출되지 않았다. 이상의 결과로부터 덩굴장미의 함량이 높게 측정되어 관상적으로 그리고 식품소재로서의 적용이 가능하리라 판단된다.
