고구마 잎과 잎자루에 대한 식품소재로서의 활용 가능성을 알아보기 위하여 14 품종의 고구마에 일반성분, 무기질 및 항산화활성에 대해 조사하였다. 함량은 K과 Ca 함량이 가장 높았으며, 단백질 잎에서 15.57~20.34% 범위로 연황미 높게 나타났고 잎자루에서는 3.71~5.97% 신천미에서 나타났다. 잎의 총 폴리페놀 함량과 플라보노이드 각각 46.26~85.10mg/g 40.25~68.37 mg/g 건풍미에서 잎자루는 14.60~37.93 10.18~22.48 mg/g으로 높았다. DPPH 라디칼 소거활성은 경우 건풍미와 증미에서 IC<sub>50</sub>값이 0.109 mg/mL로 신천미가 0.448 항산화력은 건풍미가 58.75 mg AA eq/g으로 높았고 대유미가 14.95 이상의 결과로부터 잎이 잎자루보다 항산화활성 뿐만 아니라 단백질함량과 무기질함량이 풍부해 식품소재로써 활용가능성이 높을 것으로 판단된다.
