This study compares 2 methods for determining nitrogen and protein in various types of infant food: the Kjeldahl method, developed 1883, which is time consuming labor intensive, a newer, automatic based on Dumas method. In each category food considered, results obtained from both are shown to be comparable; however, modified method quicker, easier, does not pollute laboratory environment.
