경남 합천 일대에서 재배된 보리수나무(Elaeagnus umbellata Thunb.)의 생리활성을 부위별(열매, 잎, 줄기)로 평가한 결과는 다음과 같다. 항산화 특성을 측정한 결과, 총폴리페놀 함량이 높게 나타난 줄기(829.6 mg/g) 에탄올 추출물에서 DPPH 라디칼 소거능(ECSUB50/SUB=54.04 μg/mL)이 가장 우수하였다. 유리 아미노산 분석에서는 잎(6,179.12 mg/100 g) 추출물이 열매(378.88 g)와 줄기(1,211.69 추출물보다 높았으며, 열매의 proline, 잎의 asparagine 및 줄기의 GABA가 대표적인 아미노산인 것을 확인하였다. 시판 우유를 이용하여 고초균과 젖산균의 혼합발효에 의한 호상 요구르트 제조에 미치는 영향을 관찰하였다. 우유 원료를 6시간 동안 고초균 발효를 통해서 생균수가 초기 <TEX>$6.0{\times}10^6$</TEX> CFU/mL에서 <TEX>$2.5{</TEX><TEX>\times}10^8$</TEX> CFU/mL로 증가되었다. 2차 젖산균 발효시에 생균수 증가 및 산 생성능이 촉진되었으며, 발효 1일 후에 <TEX>$3.03{\times}10^9$</TEX> CFU/mL을 나타내었으며, 고초균은 <TEX>$4.67{\times}10^5$</TEX> 감소하였다. 단백질 카제인은 1시간 1차 발효에 의해서 급격하게 가수분해되어 저분자 펩타이드로 전환되었으며, 유청분리가 최소화되면서 커드형성이 우수하였다. 3시간까지 젖산균에 의해 커드형성능이 양호하였으며, 그 이상의 발효는 우유의 커드형성을 지연시켰다. 특히 4시간 발효물은 심한 유청분리 현상과 함께 tyrosine 함량이...
