추출방법에 따른 몇 가지 약초의 항산화 활성 변화를 연구하였다. 총 5가지 약초(우슬, 목통, 두충, 시호, 향부자)에 대해 비가열 초음파추출, 환류추출 및 열처리 초음파추출을 실시하였다. 폴리페놀 함량은 환류추출과 초음파추출이 초음파추출보다 높았으며, 두충과 향부자를 제외한 세 시료가 환류추출보다 높았다. 플라보노이드 네 초음파추출과 환류추출이 더 많았으며, 우슬과 목통을 시료에서 많았다. ABTS 라디칼 소거능은 작았으며, DPPH 세시료는 환류추출에서 높은 활성을 나타내었다. 환원력은 우슬이 가열처리 시 많은 증가를 나타내었으며, 다른 시료는 차이가 작았다. 본 실험 결과에 따르면, 종류에 따라 적합한 추출방법과 전처리를 적용함으로써 가진 추출물을 얻는 것이 가능할 것이라 판단된다.

숙성온도와 기간에 따른 대추의 성분변화 및 항산화활성 변화를 분석한 결과 갈변도는 무처리구에 비해 가온숙성처리구에서 전체적으로 증가하였으며, 숙성 30일차 50일차에서는 다소 감소하는 경향을 보였다. 환원당, fructose와 glucose함량은 높았으며, 숙성온도 기간이 증가함에 따라 유의적으로 감소하였다. 5-HMF 함량은 증가하여 50일차 80℃에서 최대값을 나타내었다. 총 폴리페놀 함량도 DPPH 라디칼소거능 ABTS 라디칼 소거능도 환원력은 숙성온도가 따라서 증가하였지만 숙성일수에 변화는 작게 나타났다. 온도 페놀성 화합물의 증가로 인하여 항산화 활성도 항산화활성을 높일 수 있는 최적숙성조건은 70℃에서 15~30일로 판단되었다. 이를 통하여 건대추의 활성을 향상시켜 새로운 건강기능성 식품소재로 이용가능하며, 이에 활용도 제고 부가가치를 있을 것으로 판단된다.
