본 연구에서는 다양한 가공공정 처리를 한 더덕 추출물의 총 폴리페놀 및 플라보노이드 함량과 항산화활성 변화를 비교하였다. 함량은 S5FDW에서 73.9 mg GAE/g과 50.9 QUE/g으로 가장 높게 나타났으며, DE에서는 15.7 14.7 낮았다. DPPH와 ABTS radical 소거능은 농도 의존적인 경향을 나타냈으며, 1.0 mg/mL 농도에서 27.0±2.5%, 17.4±0.6%로 S5FEW에서 높은 소거능을 보였다. SOD 유사활성은 HFDE가 29.7±3.2%로 유사활성을 보였으며, DE가 19.9±1.6%로 낮은 활성을 나타내었다. 매운 고추와 맵지 않은 고추를 이용하여 고추장 및 김치용으로 분쇄된 고춧가루의 입도별 분포를 확인하고 이에 따른 색도, ASTA값 캡사이신 함량을 비교분석 하였다. 품종에 관계없이 고추장용 고춧가루에서는 425~300 ㎛의 크기가 가장 많았고 이를 기준으로 입자의 작아지거나 커질수록 그 함량이 적어지는 것으로 나타났다. 김치용 1000 ㎛ 이상의 입도를 가지는 고춧가루가 포함되어 있었으며 고추장용보다 입도분포가 불규칙하게 색은 크기에 따라 색의 차이가 나타나는 것을 확인할 수 있었으며, 작을수록 색도 값(Hunter Lab)이 증가하였다. 역시 높은 값을 보였다. 시료의 capsaicinoids 함량은 전반적으로 작아질수록 증가하여 색도와 ASTA값의 결과와 비슷한 경향을 이러한 물리적 특성은 품질평가 시 중요한 요소로 작용할 있다고 판단되며 보다 다양한 연구가 진행되어야 한다고 생각된다.

본 연구에서는 염생식물인 칠면초와 세발나물의 인슐린 저항성을 개선하는 효과를 조사하였다. 실험에 사용한 OLETF쥐는 CCK-1 수용체의 결함으로 인해 걸쳐 제 2형 당뇨병이 유발되는데, 저항성이 진행되는 10주령부터 28주령이 될 때까지 세발나물을 18주 동안 섭취시켰다. 염생식물식이군들의 체중이나 공복혈당 변화는 식이기간 전반적으로 대조군과 유의적인 차이를 보이지 않았다.
