딸기 과실과 설탕 이외에 젤리화 형성에 영향을 주는 산, 펙틴 등을 따로 첨가하지 않고 딸기와 설탕의 배합비를 달리한 잼의 품질특성을 조사하였다. 딸기를 70~30% 수준으로 감소한 처리구의 당도는 <TEX>$59.00{\sim}77.33^{\circ}Brix$</TEX>, pH는 4.17~4.28으로 증가한 반면, 총산도는 1.55~0.31%로 감소하였다. 함량이 줄어드는 S1~S5 L값은 5.36~30.83, a값은 27.83~37.19, 그리고 b값은 9.08~40.52로 모두 증가하였다. 줄어들수록 딸기잼의 안토시아닌 함량과 함량은 각각 9.91~5.15 mg/g, 4.86~1.46 mg/g으로 첨가량에 따른 물성 측정 결과에서도 hardenss, gumminess 및 chewiness은 첨가 수준이 낮아지는 glucose, fructose 감소된 반면 sucrose 유기산 구성은 oxalic aicd, citric acid, malic succinic acid...

녹차의 성분은 폴리페놀, 알칼로이드, 아미노산 및 기타 화합물로 구성되어 있고 카테킨과 카페인의 함량은 품질 평가 기준으로 알려져 있다. 본 연구에서는 ultra performance liquid chromatography(UPLC)를 이용하여 지표성분 epicatechin, epigallocatechin, epicatechin gallate, epigallocatechin gallate 카페인을 동시 분석하였다. 최적 추출조건으로는 25% 에탄올을 온도 25°C, 1시간 추출하였고, UPLC를 이용한 빠르고 간편한 분석조건을 확립하고 정확성, 정밀성, 직선성, 특이성 등 분석법의 유효성을 검증하였다. 지역별로 녹차 잎을 추출하여 UPLC로 카테킨 화합물 함량을 분석한 결과 총 카테킨의 함량(mg/g, 건조 중량)은 제주도 168.87 mg/g 경상남도 156.75 전라남도 148.22 순으로 존재하였고 약 7.3~26.1 mg/g의 카페인이 함유되어 지역별 생육환경에 따라...
This study investigated the antioxidant capacities and inhibitory activity of peeled lotus root (Nelumbo nucifera) as a food material on angiotension-converting enzyme (ACE). The effects total polyphenol flavonoid contents were not signicant. However, DPPH radical scavenging decreased from 85.07% to 80.70% by treatment. SOD-like 20.84% 17.97%, ACE 53.4% 50.1% treatement. Thus, consumption non-peeled should increase.
본 연구는 재배지역별 오미자의 리그난 함량을 조사하기 위해 수행되었다. HPLC를 사용하여 특이성, 직선성, 검출한계(LOD), 정량한계(LOQ) 및 정확도를 결정함으로써 리그난의 분석법이 검증되었다. 중에는 schizandrin이 3.85~6.60 mg/g으로 가장 풍부했고 그다음 gomisin N이 2.69~4.38 많았다. Schizandrin A와 A는 0.60~2.04, 0.86~1.63 mg/g이었고, G, H, J는 0.5 mg/g 미만이었다. 화합물 7종 함량은 9.04~14.90 mg/g이었다. 오미자는 각 다르지만 전체 함량에는 큰 차이가 없다. 오미자 표준화를 위한 기초자료로 유용할 것으로 기대된다.

본 연구에서는 고지방식이로 유도된 비만쥐 모델에서 금어초 추출물의 지질대사 개선, 혈당조절, 항염증 효과를 보고자 하였다. 이를 위해 C57BL/6 마우스에서 8주간 추출물을 경구투여 한 후 임상적 지표로 체중 변화, 장기무게, 혈중 지질, 혈당, GTT, ITT, 염증 사이토카인, 염증관련 단백질의 발현 정도를 조사하였다. 그 결과 추출물은 간, 복부피하지방의 무게를 효과적으로 감소시켰으며, 이는 인한 비만 개선에 추출물이 긍정적인 영향을 미치는 것으로 판단된다. 또한 투여는 중성지방과 총 콜레스테롤 그리고 간세포 손상으로 AST 효소의 혈액 내 유출을 감소시켜 비만상태의 이상과 간 손상을 최소화하는 생각된다. 비만으로 혈당조절 장애 대한 알아보기 위하여 글루코오스와 인슐린 농도, 내당능, 내성을 확인하였다. 유의적으로 글루코오스 농도를 감소시키고 인위적으로 투입된 인슐린에 대해서도 혈당 조절 보였다. 비만에서 나타나는 만성적인 염증상태에 개선 알아보고자 MCP-1,...
