본 연구에서 거세한우(26-28개월) <TEX>$1^+$</TEX>, 1 등급육과 뉴질랜드산 냉장수입 육우로부터 채끝, 등심, 우둔, 꾸리부위를 공시시료로 이용하여 일반성분, 육색, 전단력, 가열감량, 지방산조성, 아미노산조성 및 무기물 함량을 비교하였다. 흑우육은 꾸리, 홍두깨 부위 모두 단백질 수분함량이 한우고기 등급육보다 유의적으로 높았다(p<0.05). 반대로 근내지방함량은 꾸리부위가 낮았다(p<0.05). 육색은 흑우육이 비교했을 때 채끝과 부위의 <TEX>$L^*$</TEX>값(백색도)이 높았고 꾸리 <TEX>$a^*$</TEX>값(적색도) <TEX>$b^*$</TEX>값(황색도)은 전단력은 부위에서는 원산지간에 유의적인 차이가 없었으나 꾸리부위에서는 등급육이 흑우육보다 전단력이 한우고기보다 4개 모두에서 가열감량이 높은 것으로 분석되었다(p<0.05). 지방산 조성에서 C18:0 C18:3n3 함량이 C16:1n7 C18:1n9 지방산은 낮은 특히 C18:2n6...

본 연구는 치위생과 학생의 비판적 사고성향과 문제해결능력 정도를 측정하고 이들 간의 관계를 규명하기 위해 시도한 연구이다. 2013년 4월에서 5월까지 부산과 울산 지역에 소재하는 3년제 학생 649명을 연구대상으로 다음과 같은 결과를 얻었다. 사고성향은 총 평점 5점 만점에 3.20점이었으며, 1학년, 학업성적이 높은 학생, 대인관계가 좋은 전공만족도와 임상실습만족도가 임상실습경험이 없는 학생이 사고성향이 높았다. 문제해결능력은 3.06점으로 나타났으며, 높게 나타났다. 학생들의 문제해결능력도 순 상관관계가 있는 것으로 사고성향에 영향요인은 문제해결능력, 대인관계, 전공만족이며, 문제해결능력에 사고성향, 학업성적으로 이와 같이 학생이, 문제해결능력이 그러므로 문제 중심의 학습이나 근거 치위생과정 등의 다양한 교수학습 전략과 교육과정 개발을 통한 문제해결능력을 강화시킬 필요가 있다고 본다.
