본 연구에서는 국내산 특수용도 쌀품종 내 전분의 분자 및 결정 구조적 특성과 소화 특성을 분석하고 상관성을 살펴봄으로써 향후 쌀가공식품들을 개발하는 기초자료로 활용하고자 하였다. 백진주1호 전분은 다른 쌀품종에 비하여 아밀로스 함량, 아밀로펙틴의 분자량, A 사슬 (DP 6-12), 페이스팅 온도, 치반점도, SDS 함량은 유의적으로 낮았으며 B1 사슬(DP 13-24), 상대적 결정성, 호화온도(<TEX>$T_o$</TEX>, <TEX>$T_p$</TEX>, <TEX>$T_c$</TEX>), 호화 엔탈피(<TEX>${\Delta}H$</TEX>), 최고점도, 강하점도, RDS 함량이 높은 결과를 나타냈다. 소화율과 구조 이화학적 특성 간의 분석한 결과 SDS는 온도와 보였으며 이는 쌀전분의 특성의 차이가 소화율에 영향을 미친 것으로 생각된다. 국내에서 생산된 4가지 쌀품종의 전분 특성, 소화율 특성이 다르게 나타났으며 이러한 결과는 쌀품종을 활용한 가공제품개발에 활용될...

된장의 소금농도를 10%에서 6%로 줄이고 알코올 또는 겨자, 마늘을 단독 혼합 첨가한 저식염 숙성 중 품질특성을 비교하였다. amylase 활성은 2-4주에 높았으며 겨자 첨가 된장이 후기에 낮은 활성을 보였다. 메주 koji 된장에 비하여 효소 활성이 낮았으며, protease는 중성보다 산성 protease 높았다. 효모수는 겨자나 알코올, 마늘의 첨가로 현저하게 줄었으나 세균수는 첨가구에서 조금 적었다. 산화환원전위는 겨자-마늘 된장에서 수분활성도의 저하는 심하였다. 중에 L-과 b-값이 저하가 심하였고 된장은 L-값이 낮았고 a-값이 pH는 마늘 적정산도의 증가가 심하였으나, 알코올의 적정산도와 산가는 환원당은 알코올-마늘과 높았으며, 생성은 겨자의 억제되었다. 아미노산성 질소는 마늘과 암모니아성 질소의 낮았다. 8주 숙성시킨 맛과 종합적인 기호도는 알코올과 알코올-마늘 양호하여 제조는 소금의 일부를 마늘로 대체하거나 이를 혼합하여 첨가하는 것이 효과적이었다.
