본 연구에서는 조릿대잎 추출물의 탄수화물 소화효소의 저해와 혈당강하효과를 조사하기 위해, 소화효소인 α-glucosidase와 α-amylase의 저해활성과 STZ 유발 당뇨생쥐를 이용한 측정하였다. 메탄올 추출물은 0.5 ㎎/mL 농도에서 yeast α-glucosidase 활성을 18.61% 저해하였으며, ethylacetate층은 48.46%, buthanol층은 41.91%의 저해활성을 나타내어 40.31%의 보인 acarbose보다 저해효과가 높은 것으로 나타냈다. 또한 0.5㎎/mL α-amylase 22.16% 56.31%, 43.66%의 41.14%를 나타낸 따라서 추출물 중 ethylacetate층과 저해활성에서 제2형 당뇨병환자의 혈당 강하제로 처방되고 있는 저해능을 가진 나타났다. 현미와 홍국발효 콩 시료의 첨가량을 달리하여 제조한 식초의 미용건강기능성 소재(cosmeceuticals)로의 활용 가능성을 평가한 결과는 다음과 같다. DPPH와 ABTS 라디칼 소거능으로 측정한 항산화 활성은 현미 식초에 비해 홍국발효콩이 첨가된 시료가 첨가량에 비례하여 최대 7배 이상 증가하였다(P0.05). 특히 tyrosinase 저해 50% 첨가량의 시료에서 kojic acid의 활성과 유사하게 나타나 미백 소재로서의 보였으며, elastase 활성 역시 유의적으로 현미식초에 콩을 1:1(w/w)의 비율로 첨가한 높은 생리활성은 시료에 함유된 총 페놀 함량, 이소플라본 비배당체형의 genistein과 daidzein의 농도와 상관관계가 성립되었다.

시판 과일 주스와 발효식초의 총 페놀 함량, 플라보노이드함량, 유기산 그리고 xanthine oxidase(XO) 저해 활성을 비교하였다. 식초에 함유된 페놀(mg gallic acid equivalent/100 mL)과 플라보노이드(mg catechin mL) 함량은 각각 82.8~157.6 mg과 15.7~85.8 mg으로 측정되었다. 주스류에서는 사과 주스, 식초류에서는 흑초가 가장 높은 함량과 플라보노이드를 함유하였다. 유기산의 함량 중 citric acid, malic ascorbic acid는 주로 주스에서 검출되었다. 홍국발효 콩을 소재로 기능성 식초를 제조하기 위해 초산발효 동안(30°C, 28일) pH와 적정산도 및 기질에 함유된 생리활성 물질의 변화를 평가하였다. 기질의 총 적정산도(%)와 pH는 발효 20일 이후에 각각 5.87%와 pH 3.1로 나타나 일반 식초류의 산도 범위와 유사하였다. 주요 유기산은 acetic acid와 lactic acid로 전보다 5.9배(55.94±1.57 ㎎/mL)와 5.4배(3.89±0.08 ㎎/mL) 증가하였다(P<0.05). 폴리페놀과 플라보노이드 함량 역시 초산발효가 진행됨에 따라 최대로 1.9배와 2.2배 높게 측정되었다. 콩 식초에 이소플라본은 비배당체형의 daidzein, glycitein, genistein으로 확인되었으며, 초산발효에 따른 농도의 유의적인 차이는 나타나지 않았다(P0.05). 식초의 유비퀴논(CoQ₉+CoQSUB10/SUB) 함량에 미치는 초산발효의 영향은 CoQSUB10/SUB에 비해 CoQ₉의 증가를 유도하여 최대...
