육질등급별 도체등급요인에 대한 분석 결과는 육질등급이 3등급에서 <TEX>$1^{++}$</TEX>등급으로 높아지면서 도체중, 등지방두께, 근내지방도는 증가하였으며(p<0.05) 육색, 지방색, 조직감 및 성숙도는 낮아지는 경향이었다(p<0.05). 한우고기의 이화학적 특성에서, 증가될수록 전단력은 8.29 kg에서 2.83 kg으로 감소하였고, 보수력은 52.41%에서 58.03%로, 조지방 함량은 3.57%에서 25.68%로 증가하였다(p<0.05). 기계적으로 측정한 육색에서 명도는 <TEX>$1^{++}$</TEX>등급 쇠고기가 41.53으로 가장 높았고 가열감량은 3등급쇠고기가 22.11%로 높았다(p<0.05). 도축 후 24시간에 pH는 5.53-5.66범위로 정상적인 pH 값을 나타내었다. 6점 만점으로 평가된 관능특성에서, 높아질수록 연도, 다즙성, 향미 전체평점은 다즙성(0.59), 연도(0.71), 향미(0.55) 전체평점(0.6)과 상관관계가 있었으며....
본 연구는 2009년도에 전국에서 출하된 한우 암소 및 거세우 69,159두를 대상으로 등지방두께가 도체등급요인 경락가격에 미치는 영향을 구명하였다. 평균 등지방두께는 거세우(12.57 mm)가 암소(11.93 mm) 보다 높았으며, 암소의 77.52%가 등지방두께 4-15 mm 구간에, 거세우의 85.91 %가 4-18 구간에 속하였다. 도체중(평균, 315.5 kg과 413.2 kg)과 배최장근면적(평균, 76.73 <TEX>$cm^2$</TEX>와 86.23 <TEX>$cm^2$</TEX>)은 높아짐에 따라 증가 하였으며(p<0.05), 육량등급은 C등급으로 낮아졌다(p<0.05). 근내지방도는 거세우(5.29)가 암소(3.83)보다 우수하였으며 21 mm까지 증가하였고(p<0.05), 22 이상부터 감소하였다. 성숙도는 각각 6.11과 2.12로 골화 정도가 높았으며 육색은 4.85 4.67 로써 비슷한 수준이었다. 육질등급은 1등급과 2등급의 중간 수준(평균...
한우의 근내지방도에 따른 도체등급 요인과 이화학특성 및 관능특성에 관한 기초자료를 도출하기 위하여 73,316두(2009년)의 도체와 271두(2005년-2009년)의 한우 등심을 분석하였다. 근내지방도가 1에서 9로 증가할수록 도체중, 배최장근단면적 등지방두께는 암소, 수소, 거세우에서, 직선적으로 증가하였다(p<0.05). 성숙도는 암소와 거세우에서 증가하였고 평균 암소가 6.11로 가장 높았다. 이화학 특성 분석 결과 근내지방도의 증가에 따라 전단력은 8.58 kg에서 2.60 kg으로 감소하였으며(p<0.05) 보수력은 52.09%에서 58.66%로 명도는 34.08-41.97 범위로 증가되었다(p<0.05). 일반성분 분석결과 수분함량은 근내지방도 73.62%에서 55.87%로 감소(p<0.05)하였으나 단백질함량은 유의적인 차이가 없었다. 조지방 함량은 3.07%에서 26.70%로 증가(p<0.05)하였으며, 6까지 증가율은 비슷한 경향 이었으나 8 9의 각각...

성별 한우쇠고기의 품질 특성을 조사하기 위하여 육질등급이 5개로 개전된 후 첫 해인 2005년도에 전국에 출하된 42,113두의 육질등급 요인을 조사하였으며, 2005년부터 2008년도 상반기까지 국립축산과학원에서 도축된 257두의 쇠고기 품질을 분석하였다. 한우의 육질등급요인(근내지방도, 육색, 지방색, 조직감, 성숙도)은 유의적인 차이가 있었으며 한우 거세우가 가장 우수하였다(p<0.05). 근내지방도, 성숙도 및 조직감은 각각 5.02, 2.17 1.31로 우수하였으며 이에 따라 지수도 2.75(<TEX>$1^{++}$</TEX> 등급 =1, 3등급= 5)로 높았다(p<0.05). 수분함량은 수소가 73.23%로 높았으며, 조지방 함량은 17.27% 거세우의 명도(<TEX>$L^*$</TEX>), 전단력 보수력은 39.01, 4.03 kg 57.08%로 높았으나(p<0.05), 암소와 수소 간의 없었다. 전단력에 있어서 암소 7.73 8.35 kg으로 비교적 높게 나타난...
