科学技術庁編「日本食品食物繊維成分表」及び地方衛生研究所全国協議会編「食物繊維成分表」を用い, 両成分表の成分値の差異を比較検討した。更に, 両成分表を用いて女子学生の食物摂取調査から食物繊維摂取量を算出し, どの程度の差異を生じるかを検討した。結果は以下のとおりであった。1)「科技庁編成分表」に収載されている食品数は227品目,「地衛研編成分表」の食品数は231品目, 両成分表に共通の食品数は119品目であった。2)「科技庁編成分表」には植物性食品の分析値が多く収載され,「地衛研編成分表」にのみ動物性食品の分析値が収載されていた。3)「科技庁編成分表」及び「地衛研編成分表」を用いて算出した女子学生1人1日当たりの食物繊維摂取量は, それぞれ13.62gと13.42gで, ほとんど差異はなかった。4)「科技庁編成分表」を用いて算出した女子学生1人1日当たりの水溶性及び不溶性食物繊維摂取量は, それぞれ2.51gと10.77gであった。以上の結果のように,...
