Human colostrum is important for immune system development and plays a protective role infants. However, the comprehensive exploration of lipids, which account 3–5% milk, their biological functions in human was limited. In present study, triacylglycerol (TAG) fatty acid (FA) compositions mature milk were analyzed compared. Variations observed both TAG FA compositions. The concentrations 18:1/18:1/16:0 TAG, high-molecular-weight unsaturated TAGs significantly higher colostrum, whereas...

In order to improve the flavor and taste of Camembert cheese, use Monascus as an adjunct starter for production Camembert-type cheese was studied investigate its effect on proteolysis, lipolysis, volatile compounds during ripening 40 days. The without used a control. results showed that proteolytic lipolytic activities increased certain extent. addition promoted primary secondary due release some proteases by Monascus. Aspartic, Threonine, Glutamic, Glycine, Methione, Isoleucine,...

This study aimed to investigate effects of kappa-carrageenan (κ-carrageenan) concentration and storage temperature on the rheological texture properties casein micelle/κ-carrageenan composite gels. The particle size, zeta potential, Fourier transform infrared spectroscopy mixture, microstructure gels were measured. movement κ-carrageenan characteristic bond showed that micelle formed a complex with larger size through electrostatic adsorption. repulsion between molecules increased increase...

Fifteen cheese protein hydrolysates were produced by using four different proteases. Then, the free amino acids (FAAs), molecular weight distribution (MWD), electronic tongue evaluation, and volatile compounds of corresponding products evaluated, respectively. The results suggested that 2SD had strongest hydrolysis characteristic, followed 6SD FN. Samples hydrolyzed for less than 6 h or more 18 contained great defects taste. Peptides with 150 Da–450 Da mainly responsible bitterness,...

In this study, Senescence Accelerated Mice (SAMP8) were supplemented with exogenous DHA milk, endogenous normal or 0.9 % saline solution. Enzyme-linked immunosorbent assay (ELISA), gas chromatography (GC), ultra-performance liquid chromatography-electrospray ionization-tandem mass spectrometry (UPLC-ESI MS/MS), and Morris water maze used to characterize the effects of diet on oxidative stress cognition in SAMP8 mice. Supplementation milk can enhance antioxidant capacity mice organs....
