고춧가루에 포함된 씨의 함량은 고춧가루 품질에 영향을 미치는 중요한 요인 중의 하나이다. 본 연구에서는 국내에서 유통되는 고춧가루의 고추씨 혼입 여부 및 혼입량을 판별할 수 있는 분석법을 개발하기 위하여 혼입량에 따른 무기원소와 지방산 조성을 분석한 자료와 정준 판별분석법을 활용하여 예측할 판별함수를 도출하고, 이들 판별함수의 대한 판별력을 평가하였다. 국내산 5점과 중국산 5점 등 총 10점의 고추를 이용하여 고추씨가 과피 대비 0, 10, 20, 30, 40, 50, 60, 70, 80, 90, 100 w/w% 수준으로 첨가된 시료 110점을 제조하였다. 시료에서 11종의 15종의 지방산이 검출되었다. 무기원소 중 P와 S의 평균 혼입량과 유의적인(P<0.01) 양의 상관관계를 나타냈지만, Ca의 함량과 혼입량 간에는 음의 상관관계가 나타났다. 18:2n-6의 나타낸 반면, 18:1n-7과 18:3n-3의 나타냈다. 판별분석 결과 검출된 26종의 성분 Ca, P, S...
