노지 및 시설에서 재배된 한라봉의 과피에서 냉압착법에 의해 추출한 정유의 향기성분을 동정하였다. 노지에서 한라봉 정유에서 44개의 향기성분(99.7%)이, 시설 45개의 성분(99.4%)이 동정되었으며, (E)-limonene-1,2-epoxide와 neral은 정유에서만 동정되었고, β-cubebene, β-elemene, decyl acetate의 세 성분은 동정되었다. 동정된 향기성분 중 limonene이 86%이상의 가장 높은 비율로 함유된 성분으로 확인되었으며, 그 다음으로 myrcene과 sabinene이 2%이상으로 높게 것으로 확인되었다. 특성을 나타내는 큰 차이는 linalool의 함유량으로 함유량(1.2%)이 시설정유의 함유량(0.5%)의 2배 이상으로 높았다. 향기성분의 기기분석과 함께 신선한 과육 과피의 관능평가를 실시하였다. 향기특성에 대한 관능평가 결과는 과피 모두에서 한라봉이 것에 비해 상대적으로 강한 향기특성을 지니는 평가되었다. 과육은 단맛이,...
